Making homemade pasta is a passion of mine that I have had since I was little! Putting your hands in the dough and making rich dishes like these RAVIOLI from flour and eggs is almost magical!
Today, near the CHRISTMAS HOLIDAYS, I wanted to exaggerate by making these SEPARATE DOUBLE STUFFED RAVIOLI!
The filling of potatoes and cheese on one side and ham and provola on the other makes them delicate but very tasty! If you don't like the filling you can adopt this technique with other fillings such as ricotta on one side and spinach on the other, or why not make them with fish for Christmas Eve, with salmon and potatoes etc etc, up to your imagination and needs!
P.s. in theory, being large, 4 each would be enough, but the 2 of us finished all 12 😅 but on a Sunday and it's a SINGLE DISH! 😉
📝 Ingredients: for 3 -4 people
For pasta:
200 g 00 flour
2 eggs
For the 1st Filling:
4 boiled potatoes (150 g)
2 tablespoons grated Parmesan cheese
Oils, salt, pepper
For the 2nd Filling:
100 g ham (speck)
100 g Smoked or sweet provola
2-3 tablespoons Béchamel (or cooking cream or spreadable cheese)
For the seasoning:
500 g Tomato Sauce
Oil, salt, garlic, basil, chili pepper (optional)
Grated Parmesan cheese
Basil
