i work at a bakery and we use a cookie cutter to cut the middles out of normal ball shaped doughnuts (like the jam ones). then we fry the little doughnut middles and glaze those too

I was wondering if anyone would make that reference lol I did once see a recipe for jelly donuts designed to resemble onigiri. They were coated in coconut flakes to look like rice, then a bit of chocolate fondant was added for the seaweed.
I love how in the beginning, they describe how they gave it the name Donut because they removed the "nut" out of the center for better frying. That leaves a traditional circular donut with a hole in the center. Then they show these things being made, and none of them are circular or have a hole in the center. None of these are what we would have called Donuts growing up in the 1950s and 1960s, or for the many decades before.
In the 60’s we went to store called Kriskies they had small machine that make them. We would watch the dough drop in the grease and travel in the narrow path and watch them cook. Were so good and fresh. Miss those days.
Now I love doughnuts and doughrings although I've never worked on that production line I have worked on a sweetbread line and while I was being shown what to do some of the older bakers showed me how to get a long break the following night. Before the bread went into the ovens each baking tin had to have a lid on it so what some of us did was to walk across the row's of the tins and it jammed the lids and effed up the batch. One of the most famous sayings was that it must be great working where they make that great tasting bread and they'd be right for a few weeks but after a relatively short amount of time I and many others grew to loath the feckin smell of the stuff now I'd imagine that you would feel the same n the doughnut factory.😆
Gosh! Watching this video makes me miss. The time when I lived in Oregon. I worked in a bakery inside a grocery store. I learned how to make doughnuts from scratch and it was so much fun. It was one of the funnest low paying jobs I ever had. 😊😊😊
"These nozzles inject the right amount of jam, two at a time. Each worker fills 45 donuts a minute." Wait, if the worker fills two at one time, why is the amount they fill in a minute an odd number of donuts?
Note that they did exclude a step that had the donuts receive their hole. Most donuts hold the iconography of the hole in the center-ish, so it is interesting (though understandable) why they might omit this step.
Chris Parody you realize donuts don’t always have to have a hole in the middle. Wait… Wait… Wait… I have to do this right. You realize, donuts, ahem, “doughnut” always have to have a hole. i’ll leave now… But I still stand by my first part of the comment.
When I was 4 my mother was making homemade donuts and I decided to get me some more when she wasn’t looking. I knocked the pot of grease over and burned myself horribly.
