They would celebrate from when they shot up American soldiers to the day the last c130 left Americans and American associates. Technically they are now a recognized government whom became independent during that time. If they start their celebration, you would just have to get used to it. Celebrate independence day in your own country. There is noting wrong with independence days but celebrating being independence while not being independent to the home country is a disgrace.

They did go overboard setting off the loud fireworks last night, startling some people who saw the celebrations. Generally, these Mexicans in Chicago don't usually do fireworks until the 4th of July, especially in Pilsen. They celebrate Grito usually with color of red, white, and green, caravans, mariachi music, "desfiles" (or "parades'), shouts of "Viva Mexico!", and big, big "Mexican banderas", but they don't usually resort to shooting fireworks unless there is a desperate need to make such explosive noise.

My ancestors that did immigrate assimilated and fought in the war of Independence. 3 in the Continental Army and 11 in county militias. And some of those died before Congress even passed a pension act for their sacrifice.
