It's not a 100% Must but it helps your blood circulation (due to the massage) and if definitely helps preventing any sort of possible infections because it removes dead skin and the dirt like dust and bacteria over the course of the day.
Numbing can last up to 6months but since you are past it, I recommend reaching out to your previous surgeon and if no luck there. Go seek medical advice from either urgent care or your doctor.

It is not recommended but it wouldn't be the end of the world either. You absolutely should remove your scabs first (starting from day 10 or 11) and then do the method in the video from day 14 until day 30. The method from day 10-11 differs, because you use the foam too to soften your scalp before you wash it. This one, as you can see, skips the foam section entirely and goes straight to the shampoo.
