That pesto was actually good. I'm italian, and pesto is the regional plate of my city, Genova. So some tips for you that want to try it at home: 1. Use a mortar, not that thing.. Makes the pesto better (the word "pesto" means beated), but probably you haven't one in america so.. blend it. 2. don't put the olive oil all together. It's good for its flavour, but it also makes the basil not to oxigenate. So put it in this in little parts. Possibly, the best would be letting it flow in pesto. 3. if you don't like garlic, well don't use it, it would be good the same. 4. Use PINOLI, not peanuts. They're not the same. Peanuts woould change the taste of this. 5. if you haven't parmigiano, you can use some ricotta. Other good things you can cook with Pesto: 1. Lasagna: use pesto instead of tomato sauce and maybe put in it some Mozzarella. a layer of pasta, one of pesto, one of mozzarella and so on. 2. 3Ps Pasta: Pasta with Pomodoro (tomato sauce), Pesto and Panna (cream). Amazing.

I love the two of them and this is lovely, but in Italy it is like forbidden to use the blender cause the basil doesn't have to be so liquid... it must remains in very small pieces so we crush it with some instruments like pestle. It's not high level cooking, everyone do that

Oh yeah, Cameron Diaz and Drew Barrymore along with Reese Witherspoon went to the Culinary Institute of America boot camp in St Helena, CA for the two day pasta course. They probably had a blast there.

The correct pesto alla genovese is made by hitting inside a mortaio for about 30-40 minutes. till it 's going to be a smooth greenish cream. The basil is lightly sweet. In a grinder the pesto is going to be BITTER and DARK GREEN. The right way takes quite long to do it..... Mix Parmesan with Pecorino. The italian name is Pesto alla genovese. The right equipment is a mortar and a pestle, just mortaio e pestello in italian. The name Pesto is the end product by using the pestl. End result is LIGHT GREEN.
