Passatelli are a typical Romagna dish, usually in broth; this is a really delicious dry version with clams and cherry tomatoes, very tasty!
Ingredients for 5-6 people
FOR PASSATELLI:
6 eggs
250 g of grated parmesan
250 g of COMMON breadcrumbs
nutmeg
2 tablespoons of flour
grated organic lemon peel
a pinch of salt
vegetable broth, including stock cube for cooking
FOR THE SEASONING:
1 kg of clams
chopped garlic and parsley
300 g of cherry tomatoes
extra virgin olive oil
a drop of dry white wine
salt
pepper
chili
