Unfortunately, the beautiful ceps I picked last week did not dry well - we had a couple of days of really damp weather and to try to finish them off, I put them in a warm oven, but I messed up and scorched them.
So in this video, I'm unboxing an electric dehydrator (this one: www.appliancesdirect.co.uk/p/... ) and trying it out - but that means finding some more mushrooms first.

In Poland we make dumplings filled wirh dryed Wild mushrooms like this with sour cabbage. The best dish ever.

Same! But I got lucky, I found the Ox Tongue Mushroom and the giant Blackening Polypore, about 3 kgs of it!!!

Excellent video as always, you should definitely do some more dehydration vids, very useful devices especially when supermarkets reduce items to ridiculously low prices. I live right on the edge of the New Forest and I’d love to have the confidence to go out and pick some porcini mushrooms, take them home and dehydrate them, they taste amazing but are so bloody expensive!

Central Market on Lovers Lane Road in Dallas TX, has over twenty varieties of mushrooms daily. Beef, mushrooms and burgundy (claret) wine are a real winner on our table. Enjoyed your endeavors, TYVM!

I was always suprised that foraging is not really popular in the west. The "silent hunt" is really popular family activity - you pick some mushoorms, have fun in the fresh air of the forest, go back home and cook the mushooms with potatoes.

Just binging all your videos (oldest first) and you are so knowledgeable, you make me want to get out into the woods and also try lots of odd foods, so much so I’ve placed an order with an oriental supermarket! The deers were amazing.

Just love the foraging and the drying! Great deal on that dehydrator. I save the desiccant packets from my seaweed sheets and such to put in with my dried foods as well.

Boletus edulis (and other boletes, i.e Leccinum scabrum) actually tend to grow near birch trees in autumn, which I often use as an indicator :)

@@AtomicShrimp is it safe to put silica packets so close to food though? To my knowledge the anti-oxygen packets you get in beef jerky for example, are different things than the silica you find in cardboard boxes.

@@immersim311 should be safe. The silica gel granules are large and the packs are made from a fine material. It not toxic anyway. Just not a good idea to eat it in qiantity

Interesting. Most boletus (or is that boleti) in some parts of Sweden contains trace amounts of caesium-137 since the Chernobyl "accident" in 1986. Some of them are not recommended to eat in large quantities for that reason. I do like penny bun soup though, and slippery jack is nice when fried in lots of butter.

Silica gel is poisonous! Wouldn’t some salt or rice grains be a better solution or something else

Nice video as always but...as an east european Im mushroom foraging since I was able to walk and there were some mistakes...now I know Im 2 years late but I want to help...its better for the forest when you just cut off the mushroom and leave the bit that was in soil there so the connection wont be damaged and I think it can regrow( Im not sure as thats only what my grandparents and parents used to say..I mean the regrowing thing XD).Also if you didnt take that mushroom because it'll expand its colony thats fine but if you were scared of the taste dont be there is minimal difference in flavour...And Im not sure if this is good or not but we usually wash our mushrooms because you never know if something didnt use a potty near it...I Also recomend taking the spores of the older mushrooms...to me it has no special flavour but its just a recommendation..Now my english is not best so if something sounds offensive Im sorry I only want to help and this all is just a recommendation from someone that goes mushroom foraging for the whole season 12 years in a row

It turns out I was taught safety well as a North American child, because at first glance I thought the fallow deer was a moose and I felt all of my muscles tense up at once, in preparation to run away 😳

Great video and your knowledge shines through. For us non-foragers is there any gain in drying the fresh mushrooms from the supermarket - portobello, chestnut, closed cup etc.? Thanks.

It can be worth it - drying does tend to intensify the mushroom flavour of even shop-bought white mushrooms, and it's probably worth doing if they have a load of them on offer or something - I might make a video about this actually

Always carry a knife when foraging and just clean the mushrooms as you pick them. Don't bring dirt from the forest into your kitchen.

I see a TON of Jews ear or Elf ear mushrooms here. I've never picked them, but apparently they taste horrid unless you dry them and then use them in soups or as a garnish for noodles ect. A place near me has a grove of trees that burst out concrete from an old car park and they're all just littered with them.

I believe if you soak them in rum and cover them in chocolate, they have an almost Turkish delight feel. They do have to be with other flavours though. Very common in Asian soups 😊😊

idk if youll see this, but why pick the young ones, instead of letting them grow and picking it later? is it a different taste? is there just a good chance it wont grow to maturity?

The mushroom drying is so cost effective. Coles and Safeway (Woolworths) price gouge up to AUD$6 for a small punnet of Porcini.

Hi there . Great video . Have you ever tried putting porcini and chanterelle in frying pan and making mushroom source ? Seems to waist all the flavours but again never tried drying them . Thanks

I find porcini a bit disappointing when cooked fresh - they just go mushy and they don't have a lot of flavour - the drying process significantly develops the flavour, I will cook them fresh if I am cooking out in the woods and it's what I happen to find though.

Yellow cap mushroom isn't mature SEP it's boletus. 6 types of baletus mushrooms exist. SEP it's a king of mushrooms baletus probably second after SEP. But my favourite mushroom - Chanterelle! Other mushrooms just can't stand against😄

For the discussion about the Roots... I heard that you can turn the mushrooms out so you would not take any Roots on it with you. But just with porcinis and some others. I also heard that you should cut most mushrooms off at the very bottom. For example you can’t get some Mushrooms which are growing on trees without cutting them off.

There does not appear to be any evidence that picking mushrooms (vs cutting them) makes any difference to the health of the underground mycelia. I know some people argue this quite strenuously

Just an advice: U should cut off those shroomies from the bottom so u can expect to find them next year in the same place but twice as much. if u pull all the roots out , nothing is left for them to multiply

I've heard that assertion a few times, and I have also heard the exact opposite argument. As far as I can tell, there is no evidence that either way makes a difference

Me too, but I've heard opposite arguments in about equal amount, all from sources who in theory should know their stuff, so I'm not sure who to believe, if anyone at all

They actually grow from the mycelium which extends deep beneath the surface, the mushroom just appears above ground to spread spores. Picking them like this should do no permanent damage.

I thought you can't pick mushrooms in the UK? I'm from Poland and mushroom picking is a part of the culture here and some Polish guys in England got penalised by doing that?

I know this is an old video but for future reference if you don't already, don't pull mushrooms out of the ground, as it's not good for them. Bring a knife when you forage and cut them off as to not disturb the mycelium and maybe give the mushrooms a better chance of growing back.

I mean, it's no bad thing to be careful, but since it's very common for the fruiting bodies of fungi to be knocked down by deer or other animals, I expect the organisms are adapted to survive that sort of abuse

I don't really enjoy them fresh - the texture is too soft for my liking. Drying greatly intensifies the flavour too.

Hedgehog mushrooms are one of my favourites for cooking fresh - good, tasty, solid mushroom that one (although it can be a little difficult to clean)

Ah, no, I think not. You don't want to do that. There's nobody who could salvage any good from getting sick from these. Answering for a friend who got horribly ill and was near death from other health circumstances, combined with ingesting the toxic mushrooms. Hope you're kidding.

Drying them intensifies the flavour greatly. Also the texture of ceps is just not that great when cooked fresh
