Scallion, Mushroom and Tofu Dumplings
Makes 28
2 bunches of scallions, chopped
4 cloves garlic, grated
4 blocks tofu or 320g, mashed
1 cup shiitake mushrooms, finely chopped
1 tbsp grated ginger
1 tsp ground white pepper
2 tsp mushroom seasoning
1 tsp msg (optional)
2 tbsp soy sauce
2 tbsp sesame oil
4 tbsp vegetable stock or water
28 dumpling or gyōza wrappers
1 - 2 tbsp oil for frying
1/4 - 1/2 cup water for steaming
Method:
🔸Mix all the ingredients in a bowl.
🔸Carefully peel and separate dumpling wrappers.
🔸Wet the edges and place a tablespoon of filling in the middle.
🔸Fold or pleat the dumplings any way you like.
🔸To cook, add oil into a non stick or cast iron pan. Once the bottoms are golden brown, quickly pour in water and immediately cover with a lid.
🔸Cook for 4-5 minutes until the water has evaporated and the dumplings have dried at the bottom.
🔸Serve with your favourite dipping sauce or chili oil.
