I love Paperboxhouse's Alfred's Eggman... it's great. They re-dubbed Eggman in a playthrough of Sonic 06 and it made the entire game bearable.

I'm not exactly sure if this counts as a "cover" since I just took an instrumental of Lagtrain and the isolated vocals of E.G.G.M.A.N and fumbled around with retiming and chopping up the latter to fit with the former (I think "mashup" is probably a closer term.)
