Earl Grey Creme Diplomat Croissant 

This Earl Grey creme diplomat filled croissant is super delicious! We love to make it for weekend brunch. It's also great for anytime coffee/tea dessert. It's easy to make and goofproof. You can substitute Earl Grey for any other flavors that you love, matcha for example. I suggest flavored teas (artificial or natural are both ok) for this recipe for a more consistent result.

3 egg yolks
30g sugar
24g cake flour/low gluten flour/starch
240g milk + 2 bags of Earl Grey tea
30g sugar
85g whipping cream + 6 bags of Earl Grey tea
8g sugar
