I made this cake for my mom's birthday, I wasn't sure if I'd be able to top off last year's Blueberry Lemon Cake but it's safe to say that my mom has a new favourite cake!

I know! It was for my mom's birthday so I didn't wanna cut into it before she did. But then I forgot to record her cutting it 😭. I've got pictures of the slices on the blog though!

this cake looks amazing! ✨ may I know what type of non-dairy milk you used for the recipe - would oat or almond be better (allergic to soy)? and any vegan butter recommendations for this cake too? ☺️

I used Soy Milk but any non-dairy milk will work! For vegan butters I like to use Melt for the cake and Earth Balance baking sticks for the butter cream.

how come you chose baking powder over baking soda if there is an acid in the recipe? also, what is the purpose of the apple sauce and can i omit that? thank you!
