Easy Shrimp Fry Recipe by Aasai Rasai:
25-30 raw Jumbo Shrimp (unpeeled, deveined, tail-on)
1 big onion (thinly sliced)
1 tablespoon fresh ginger & garlic (minced)
A few curry leaves
1 tablespoon paprika
1/2 tablespoon crushed pepper flakes (optional)
1/2 teaspoon cumin or fennel seeds
2 green chillies (optional)
1 tablespoon oil (for frying shrimp)
3 - 4 Tablespoons oil (for frying onions)
(Marinade)
1/2 teaspoon turmeric
1/2 teaspoon salt
1 teaspoon garlic powder
Juice from 1/2 a large lime
1) Wash the shrimp. Leave shell on. Mix the marinade ingredients with shrimp and leave for 15 minutes.
2) Pan fry the shrimp in 1 tablespoon oil (or grill the shrimp)
3) Fry sliced onion until almost caramelized. Reduce heat to very low and add ginger, garlic & green chillies (and fresh curry leaves if using). Fry for 3 minutes.
4) Add the spices & dry curry leaves. Fry 30 seconds. Turn off heat.
5) Mix in the fried/grilled shrimp. Enjoy!
