Watch legendary Polish director Jerzy Skolimowski go after Viggo. Then watch Naomi Watts screw up the courage to do the same. The beauty of this scene lies in the status battles. Viggo knows in the eyes of his God he's on the wrong side of morality. But on this earthly plane he must abide by another set of rules.
Go after your scene partner. Give them something to fight back about. Don't be polite. Get in their face, mess with them, surprise them.
(But if you want to spit on them you'll have to ask permission first obviously. Don't be a lunatic about these things unless you're in a scene with Jeremy Strong then by all means go nuts.)
