Follow along as Melissa Clark shows us how to make her easy vegetarian skillet chili, which comes together in just 30 minutes and has been a staple in her home during the past year. If you have canned beans, tomatoes, onion and garlic in your pantry, you can make this dish. And the pickled onions aren't strictly necessary, but they add a welcome tangy contrast to the beans.

In India we call it "Rajma".Add a little ginger paste while sauteing, water after adding beans, have it with steamed rice and there you have it " Rajma Chawal "

I’d add bell peppers (some fire roasted), chopped deseeded jalapeño, maybe some fire roasted Anaheim/poblano peppers and more seasoning/flavor.

I recommend Miyoko's creamery as a plant-based butter substitute- it tastes almost EXACTLY like real butter, spreads like real butter, and best of all it BAKES like real butter. A great find for me in my kitchen.

I've made this--it's excellent though I personally like my chili a bit more liquidy. So that's something you should know. You could still use the recipe--add tomato sauce and some water. I always add a bit of cocoa or dark chocolate. The pickled red onions are a keeper--just perfect acid, sodium.

I don’t mind the thickness or chunkiness but I prefer more freshness and brightness and layers of flavor. I often use fresh corn, diced mild green chiles, and a spoonful of peanut butter for good measure...works for me!

Oops, meant ADD tomato sauce (not sub out). But yes, like the corn in there. Not sure re: peanut butter though.

chile or chili powder? I often see folks from outside the US asking this, but I'm also curious. Chile could be like ground spicy peppers, while chili powder is what I would instinctively put in chili.

Canned beans are never soaked(to get rid of inhibitors) prior to cooking and canning. Also onion tears can be avoided by pulling out the core solid white segment is the centre of the halves- and then proceeding to the chopping- I cook daily and do not have any tears!

Love this recipe. But I have to tell you that I've been forced to UP my dairy consumption in my 63rd year due to the beginnings of osteoporosis. Almost impossible to achieve 1200 mg calcium daily without dairy + kale, almonds, etc. I eat yogurt, lower fat cheeses like feta, and milk (delivered in bottles by our local dairy farm and all from one herd). I also eat eggs, and tinned salmon and sardines (also for calcium). No meat. My vegan days are gone, though.

Living without butter is easy! Flora and Country Crock plant butter sticks are virtually indistinguishable from regular butter, in every application - baking, cooking, spreading, gnawing straight off the stick. Don't let someone try and steer you into buying Earth Balance! It's horrid, and you will forevermore think that non-dairy butter is awful. It's exciting to see someone who's in the food world as an animal user be excited about eating even fewer animal products, even a year after you started trying!

Completely uninspired. That chili looks bland as hell. My husband is vegetarian so I often think of how to make delicious stuff for him. 1. Pressure cook your own beans if you can. 2. Add 2-3 diced jalapeños 3. Add 1 diced red bell pepper 4. Add some chipotle in adobo sauce. 5. Add some lentils for a meaty rich texture 6. More tomatoes 7. A LOT more spice.
