If you're Asian like me, you already know this. But for everyone else...... There are dozens if not hundreds of different kinds of tofu and soybean. It is a magical plant. Regular tofu, hard tofu, fermented tofu, stinky tofu, silky tofu, fried tofu, tofu skins, edamame, miso, dozens of different soy sauces, smoked tofu, soy milk, etc. Now go out there, have fun, and enjoy tofu. The thing I love about this is that she emphasizes the fun, creativity, and mental gymnastics you can have in cooking.

@Hailey Nicole 100% Hailey I have. Every vegan I know loves to shame people publicly and privately. On social media and in person. But guess what. The main point is, STOP TELLING PEOPLE WHAT TO DO WITH THEIR BODIES. The aggressive vegans I’ve met always preach to me, yet have no clue about my dietary habits, my allergies, and most of all, should not be worrying about what I put into my mouth. Plain and simple. I’m glad you guys have something you love and makes you feel better about yourselves, I really do! But the thing is is most vegan need to stop Making it a religion. I believe in “Pro-choice”. I don’t care what a woman does with their bodies! I’m glad to support them. But whenever a Vegan tries to tell me about my diet and what to do with it, I tell them they shouldn’t be “pro-choice.” Can’t have it both ways. Telling someone else what to do with their body is just 100% wrong in anyway.

Not even just environmentally, but healthwise as well, A LOT of people would benefit from moving to an 80/20 diet.
@1bwash

Game central forever environmentally it takes less resources and creates less pollution to get produce vs meat from a farm to your plate. Health wise, you’re still get “meat vitamins” if you’re having an 80/20 diet. You might know all these things if you bothered to listen instead of immediately opening your mouth to let ignorant nonsense fall from your lips.

@@otterpuplover there is a lot going on with a meat centric diet, processed meats and red meats are carcinogens, and the more you have the more you increase the chances of getting cancer from them, also not having enough fiber increases the chances of gi tract cancers, especially when you have animal products up in there rotting and not going anywhere anytime soon, so things get exponential fast, you increase the chances of carginogens in meat by overcooking it, and 100% of fast food meat has these carcinogens present because its all overcooked to reduce contamination, it comes in covered in salmonella and e coli, so they get rid of it by overcooking it. There is a reason Gordon Ramsay rages about uncooked meat stored with other food. I could go on about how the industry processes "downers" sick and dying animals, while you can't catch most diseases another species can die from there are a few you can and the industry doesn't make the distinction. if you are concerned about gmos animal feed is mostly gmo, and the way glyphosates work is by binding to proteins, meat is full of glyophsates. Its also passed in fluids, milk is full of glyphosates. Anything labed as "organic" just means the animal was/is currently on an organic diet, they could have been fed gmo food for years. meat really acts a go between, everything you get beneficial from meat the animal got from their food, there isn't anything you can't get without meat.

I feel like 80/20 (and cooking at home) makes is extremely easy to maintain health and weight without worrying about it. Especially for cholesterol and blood pressure. Also I would recommend Indian cooking....the more flavorful the meat is, the less you need. Cook some beef curry and you will end up eating maybe 3 ounces if you're being generous. I made this on the weekend and it was FAB! Polenta the first go-round and then the following day I combined it wth leftover Israeli couscous and it was equally divine. Such a great recipe. Thanks, Melissa, I love the 80/20 idea!

Underrated protein source: lentils. Cooks quickly, super versatile and super delicious. Indian vegetarians have survived on that stuff for thousands of years. Indian stores usually carry the whole range of lentils, each of which have a very distinct flavour profile so you never get bored.

Since starting college I've almost completely cut meat out of my life. I now only eat it when I come home or when I'm trying something new, because I'm try to learn to vary my diet. Next semester I think I'm going to work on dairy, which is a bit harder for me to cut out. If everything was willing to sacrifice a bit more (even without going vegan!) I think our world would be in better shape. There is power in our consumptive decisions. We can't just expect science or government to save us from our own actions.

I love this video! I think her approach is so great for those who are skeptical about a more plant based lifestyle. It’s not about being a perfect vegan or 100% zero waste. It’s about the small changes. Diets with more plants based options worked in are better for your health and the environment, so, win win!!! Also, she’s great. would love to see more content from her.

I ended up moving to SF and I couldn’t find any of the cuts of meat I needed nearby! And they are so expensive! I removed meat from most of my meals and only consume when I visit my Mexican family. I feel so much better and am realizing I don’t digest it well! But I loooove chicken :) Might give that mushroom recipe a try!

This is exactly how I started my less meat journey! I love how you eat bourginon with pasta. It's a no-no in Sweden and according to French standard, BUT I like it with both potato and pasta. Pasta is the Canadian way according to me. Best dish! :)

This is why I call myself a flexitarian! I'm happy to splurge occasionally, but my rule is only 1 meat product per day, and only on the days I work out. If I worked out, chicken breast is just such a protein-dense option and I can't stand endless protein shakes. I've completely "converted" to vegan cheese because they make it so much better these days! Sometimes I'll do goat, admittedly. Overall, I feel much better eating no dairy, I think we're all a bit intolerant. By eating this way you're doing great things for your health long-term and the environment! More flexitarian content please!

“I am a committed carnivore…and I think we should all be eating *a lot* less meat” Total respect. You can be a meat-lover and still admit cutting down on meat & dairy can still help so it’s worth doing it if you can. My diet has been pescetarian for years so i can eat eggs, dairy & seafood but I mainly eat plant-based because it’s what I prefer

Making the Indian butter chickpeas and the mushroom bourguignon later this week. Excellent suggestions in this video. I too cannot (for now at least) give up on butter and cheese, but I can totally get behind more plant based food that is high on flavour.

I'm "veganish" and I really enjoyed that my chinese american ex didn't *need* meat in every dish and was good at cooking tofu. I also thought of asian cuisine when she talked about just using a tiny bit of meat to flavor the dish rather than it being the main thing like my mom's potroast. Meat use to be kind of a delicacy and since america got relatively wealthy we eat a ton of it as a flex but at this point it's not doing us alot of good.

Honestly, I will never go full vegetarian but I try and have at least 1 meat free meal per day and I love it. Also: to ANYONE on a budget, eating vegetarian is WAY cheaper. Beans and rice will last you a VERY long time. I've had to make $10 last me a week and vegetarian was the only way I was able to do it.

That’s been my approach to cooking and eating for the past 10 or so years, for exactly the reasons you state. Not only do I feel great, but when I have meat I enjoy it so much more. Also, I’ve discovered all sorts of ingredients that I hadn’t thought of using before, such as barley, tofu, etc.
