It’s best to mix 50:50 rice flour and all purpose flour to have a softer Bibingka, because when using all "rice flour" the texture will be bit hard after a day or after putting in the refrigerator. -If after a day or already came from refrigerator, best to heat up for 2-3 minutes in the microwave before serving, then the texture will be as good as new cooked Bibingka☺ Happy Cooking🧑🏻🍳
My wife said to me after watching the video the adding of more cheese and sugar after baking is a "stateside" version. In the Philippines once baked just light spread of butter and a sprinkle of freshly grated coconut and it's done.

In our place in Ilocos, when we use rice flour it's already rice puto. Still it tastes good. When we use glutinous rice flour, we call it bibingka. Talagang malagkit

Hi Juliet, thanks for this question and thank you also for watching my recipe. Bibingka is actually is a process ng pag luluto na may apoy sa ibabaw at sa ilalim. If using frying pan I assume you are referring to steam it, if in that case pwede naman, kya lang hindi na bibingka ang kalalabasan it's going to be puto na hehe✌🏻or just be creative using frying pan with uling or charcoal sa ilalim then takpan ng flat surface then uling din sa ibabaw ng frying pan that's how the traditional way of doing it may apoy sa ibabw & ilalim, I think that's possible naman.

Yes po, usually giniling na bigas or they call it galapong ang ginagamit sa bibingka, but we can also use rice flour na nabibili sa grocery stores. But I heard mas masarap daw pag galapong ang ginamit. Thanks for watching this video. Keep safe always
Thanks for asking that question Joy. yes rice flour is ok but you're right tumitigas talaga sya if more than a day na, if serving it after a day na or if nailagay na sa fridge. It's advisable to heat up in the microwave first for 2-3 minutes before serving and it's perfect like bagong luto lang 😊. sir hindi kba gumamit ng all purpose flour?? Hindi kc nakalgay sa discription ng ingredients mo, pero dun sa note advice mo, 50:50 APF at rice flour use for the best result, anu po ba tlga, gumamit ka po ng APF or hindi slmt
@@manuelcastillonesjr8272 option lang po yan, kasi pag pure glutinous rice yan ung usual na ginagawa pero medyo matigas after 1 day na hindi maubos . Pero pag 50% glutinous rice & 50% rice medyo malambot parin 2nd day na. San it helps po. Nsa sa inyo po kung ano ung gusto nyo I-try☺️
To all watching ,this is not an authentic bibingka.too many cheese.i grew up where the basic Ingredients and then spread butter when its cooked while still hot.
I made this and it's only good on day of its made. Afterwards it's really hard. I would not try it. It's a hard bibingka. Even just right from the oven.
