Here's a really easy soup to make, if you happen to have leftover rice, some chicken broth (boxed is fine), some leftover chicken (like a rotisserie chicken), some lettuce, ginger, and scallions.
Also, we should put more lettuce in soups.

My husband (of 37 years) HATES cilantro. Though I do slip into long cooked soup. I eat ceviche with my grandchildren...

Cilantro has a very strong soap-like taste and, at least to me, doesn't have any redeeming quality.

4:08 - Kenji definitely knows this tip, but this is for anyone else reading the comments, you totally do not have to freeze stock in large batches and defrost in large batches. I freeze stock all the time. I reduce it by half to 1/10th if you really want, freeze it in an ice cube tray, and then pop an ice cube in a pot of water on the stove. Boom instant homemade stock. No defrosting, no freezer space issues, nothing. I reduced an entire stock from a 25 pound turkey carcass to just 6 small ice cubes. Saving bones from meat makes me feel good. Like I'm using every part of the animal. Bonus that I can save like $20 worth of stock with each time I make it.

Boil iceberg lettuce leaves until wilted, pour light soy and sesame seed oil over. Roommate from Hong Kong got me addicted to that.

My family is Sicilian and my mom used to make a lettuce soup that was so delicious. I remember lots of salt, pepper and olive oil. I don’t remember what else went in but it was delicious!!!

My mum would make this all the time when she was tight for time. We always had rice and chicken in the fridge. I thought adding lettuce was a thing only my mum would do 😂

This is an interesting recipe because this is almost like congee. Growing up my cantonese parents would do this with leftovers but with water instead of stock and cook for a lot longer untill the rice release a lot more starch to make congee.

Okay this is a staple in my house now. The first two times I made it, it was out of leftover everything (even the fish sauce was from leftovers). Now basically any time we order Chinese, this is what we do with the rice, and I’ll buy everything else just to make this because it’s so good.

Ive found that you can improve a store bought stock by just adding some unflavored gelatin. It gives some real body to it

Love that you've been using a cleaver lately ! I also started a few months back with a CCK Chinese vegetable cleaver, and its hard switching back to any other knife !

I really like how you added the fish sauce, a truly important ingredient imo. I would sometimes add a corn starch slurry for that dense broth my family loves and usually top it off with chinese hot oil or just sriracha.

the freezer method works for me because I usually only cook for myself! mainly because I produce only small portions of bones when I cook, or I don’t have enough vegetables at hand, or I’m too tired to make stock. And I speed up thawing by reducing the stock to half or less so I can drop them into boiling water

one of my favourite dishes, when I worked in the food scene, was steamed Romaine or iceberg lettuce with an oyster sauce dressing. It was so good and the first time I had ever seen lettuce cooked. Try it before you say anything it is delicious

I usually made this if my fridge is full with leftovers! would like to see some orange & red in that. my favorite way is to add a dash of sesame oil or some homemade chilli oil.

I have now made this twice. Once, I forgot where my fresh ginger was and used powdered ginger instead -- and I have to say I massively prefer this to needing to fish out the ginger pieces! Thanks for the technique, I'm going to be coming back to this one a lot.

I love how kenji doesn’t teach a dish he teaches a sort of style of cooking which is to just be really adaptable and use what you have at hand. It’s good to have some recipes exactly followed, but at some point, as kenji shows, you need more versatility.

As a Chinese-American I can confirm lettuce in soup (or cooked leafy greens in general) is common Chinese cooking practice. Every time I eat salad my mom tells me “if we stir fry your salad, it’ll fit in your palm” 😂😂 I think it’s leftover cultural practice of cooking everything for health/food safety reasons, but it still cracks me up every time I catch her frowning at my non-wilted lettuce.

We used to make wilted lettuce salad. Leaf lettuce from the garden with a hot dressing made from bacon fat and vinegar. I wouldn't usually think of adding it to soup, though I do add stronger greens like kale or spinach so it's not a stretch in my mind.

Sunday I made a similar soup, I had smoked chicken quarters leftover, rice leftover, ginger, mushrooms, parts of a couple carrots i had shredded. and scallions I needed to use, added some garlic, thinly sliced onion, chicken broth, red pepper flake, and soy sauce, it was good.

Used this today to feed my brother, parents, partner, and I :) thank you for posting recipes that are a great use of leftover ingredients. This is one of the few ways I'll eat lettuce! My Chinese partner has really gotten me off of raw vegetables 🤣

Find I've been putting instant dashi granules in just about every quick soup like this I make recently. Does a lot of work without interfering in any way with whatever flavors I'm playing with.

Easiest chicken soup ever: put a whole rotisserie chicken in a pot. Add 7, 8 cups water. Bring to a boil, usually takes 20 min. Do not add any salt ever. No fat to skim either. After it boils add a sliced leek (or onions), sliced mushrooms, sliced 5, 6 carrots, whatever and simmer till veg are cooked. Voila! Later when cooled take the meat off the bones. Add chopped parsley etc. Best tasting, easiest chicken soup ever. I kid you not.

Thank you, this looks amazing! I cannot eat rice due to T1 diabetes, but I can definitely make this using cauliflower rice, and believe me, I will make this!! 👍🏼 There is always a way to adjust!

Why can you not eat rice because of diabetes? I have type 1 Diabetes too and nowadays there is no problem with eating rice or other food that contains a a lot of carbs

@@dome1587 , probably a better choice of words would have been “I choose not to consume rice and high carb foods for the benefit of my health.” I maintain a strict low carb diet, and follow a regimen that helps me maintain normal, non-diabetic blood sugars around the clock, 24/7. My A1c is consistently between 4.5 and 5.0, I use less insulin, I feel fantastic, and I eat healthy and delicious low carb food, and my risk for horrible diabetic complications is extremely low. That means more to me than the momentary enjoyment of high carb foods like rice and roller coaster blood sugars. Especially with so many delicious healthy alternatives... 👍🏼😊

Add half a nutmeg, and a bit of clove would make it a little bit better. Idk, maybe just because I'm asian. Chicken soup, with ginger, nutmeg, cloves, and generous amount of white pepper just give me the perfect amount of spiciness, warm, and fragrance
