Made this recipe for the fam tonight. It’s super fast and delicious for a week day meal with left over for lunch tmr. The measurement of spices may seem like a lot when put in but does turn out perfect at the end. Added cilantro and dash of lime before chomping down and it’s heavenly. Thanks Casey.

The things I do differently is sear the chicken first, sazon con achiote for my seasoning, one can stewed tomatoes and one can rotel, and one can chipotle peppers in adobo sauce. Also I use an immersion blender instead of adding corn starch. Everything else is pretty much the same though. Sometimes I'll use only half a can of the chipotle peppers if I want less heat.

..... consider trying to cook your tortillas on the stove differently if they're coming out hard and crispy? Lol I've never had that issue on the comal unless I leave them on there for too long

I see that your cutting board keeps moving and sliding. But you can put a damp paper towel or a washcloth underneath to keep the board from moving. Hope this helps!

To stop your cutting board from sliding, you can get paper towel (enough to cover the bottom of your cutting board) and wet it, then put it under your board.

I’m a totally American washed Mexican and even I don’t put tortillas in the microwave... dam yuuuck it changes the flavor and texture badly 🤮 to each their own I guess
