🥣 Ingredients:
1 corned beef brisket (with seasoning packet)
8 small red potatoes, halved
1 whole cabbage, roughly chopped
2 carrots, peeled and diced
1 onion, peeled
Water (about 12 cups)
🍽️ Directions:
1. Begin by prepping the vegetables. Halve the red potatoes to ensure they hold their shape in the soup. Roughly chop the whole cabbage and dice the peeled carrots.
2. In a large stockpot, add enough water to cover the corned beef brisket and then some (about 12 cups).
3. Place the corned beef brisket in the pot along with the seasoning packet and the peeled onion.
4. Bring the water to a boil, then reduce the heat to medium-low, cover, and simmer for 3 1/2 to 4 hours.
5. After simmering, add the chopped cabbage and halved potatoes to the pot. Mix everything into the soup, cover, and cook for an additional 30 minutes.
6. Once the vegetables are tender and the flavors have melded, remove the pot from the heat.
7. Take out the corned beef brisket and chop it into bite-sized portions. Mix the chopped meat back into the soup.
8. Serve hot and savory Corned Beef and Cabbage Soup and enjoy the delicious flavors!
