My grandmother made this but she toasted the semolina first to bring out the natural nutty taste in the grain.

how do you get the same flavour and texture as the wedding ones that come in plastic pots?

This recipe has a very similar texture, just keep it in the fridge for a few hours to settle. You can even amend the ingredients and add pistachios instead of mixed nuts.

I have fine semolina, should I increase the amount of semolina next time? mine now the next day is kind of runny after being in the fridge overnight. Was hoping it would be more thicker and firmer semolina.

For this recipe you will need to use coarse semolina, this will make it thicker and firmer.

If I use condensed milk how much water should I add relatively?

If you use whole milk, you can then add in condensed milk to make the dessert sweeter. No need to add water. :) Unless you substitute whole milk for evaporated milk, in that case the correct ratio is 1 part evaporated milk to 1 part water (1:1)

In bengali families they really like to use ghee aswell instead of butter. could we use ghee too? or would that not taste nice?

Yes, you could also use ghee instead of butter :)
