DAY 4: TUSCAN SALMON RECIPE: I haven't yet published this on the blog (let me know if I should!) but as a rough guide:
INGREDIENTS
4 skinless, boneless salmon fillets
3 tsp chopped garlic
1 tsp paprika
1 tbsp oregano
100g sun-dried tomato (roughly chopped)
100g low fat cream cheese
150ml gluten free chicken stock (made with 1 cube and 150ml boiling water)
50g parmesan cheese
120 g spinach leaves (shredded)
Salt and Pepper
METHOD
1. Fry the salmon fillets in a little olive oil (from the sun dried tomato jar if possible as it adds flavour!) for 2-3 mins on each side until cooked through.
2. Add the garlic, paprika, oregano and sun-dried tomatoes to the pan, fry for a minute then add the cream cheese, stock and parmesan. Mix well and simmer until it thickens a little. Add the spinach leaves, cook until wilted then serve.
I made the chips by par-boiling my cut potatoes for 5 mins, then draining and air-frying at 200C for around 12 mins. I will perfect this recipe though and share them properly when they're perfect!
