Easy Healthy Lemon Bars
Today I'm going to show you how to make lemon bars with oatmeal crust.
These light and creamy lemon bars are healthy treat you can't resist.
They're naturally sweetened, has no butter and no flour, but still great in texture.

HEALTHY LEMON BARS RECIPE
(Makes 9 bars)
Ingredients:
FOR CRUST:
1 cup ground oats (or oat flour) (100g)
1/4 cup honey (85g)
1/4 cup coconut oil (50g)
FOR FILLING:
5 large eggs
1/2 cup honey (170g)
1/2 cup lemon juice (120ml)
1 tbsp lemon zest
1/3 cup ground oats (or oat flour) (35g)
NUTRITIONAL INFO (per bar):
230 calories, fat 9.5g, carb 33.1g, protein 5g
Preparation:
For the crust: in the bowl, combine the ground oats, softened coconut oil and honey. Mix with the fork until the dough just comes together.
In a lined 8 by 8 inch (20 by 20 cm) baking pan spread the oat mixture, pressing with the fingers around the corners.
Bake at 350F (180C) degrees for 10 minutes. Let it cool until you make the lemon filling.
For the filling: in another bowl, beat your eggs, then add the honey, lemon juice, lemon zest and ground oats. Mix until well combined.
Pour the egg mixture over the oatmeal crust and bake at 350F (180C) degrees for 20-25 minutes, until set but still soft when gently touched.
Let it cool for 1 hour at room temperature, then place the baking pan into the fridge for 3-4 hours.
Cut in 9 equal squares (or 16 if you want smaller pieces).
Dust with the powdered sweetener, if you wish.
Enjoy!

I have done this recipe at least 6-7 times now and I love it. Here are my personal tips: - For the crust, I always double the measurements but I keep the original quantities for the filling. I prefer it this way, because the base is more solid and the bars are more satiating/filling. - It is extremely important to press the edges enough with your fingers, otherwise the filling will pour down on the sides of the base and you don't want that :)

I just made it for the first time. I didn't have coconut oil so I used olive oil. A mistake I think, and I agree with you about the crust.

I use sunflower oil because we don't like the taste of coconut. I also baked this cake several times, it's my children's favourite.

I'd just like to add that I made this recipe but instead of 5 eggs, I added only 2. And still it works! It was great, delicious and less calorie dense. So there you go, if you're watching your weight, you can alternate the recipe a little bit and still get this tasty desert. I usually pack it for a breakfast at work and all my colleagues loved it as well!

I don't count calories, only carbs. An egg only has 1 gram of carbs each. And 80 to 90 calories. You're already using a ton of sugar for this recipe, so cutting out a few eggs really isn't doing anything. If someone was really seriously dieting, they wouldn't eat this at all. If so, only one small bar a day.

Yeah sugar and honey! So healthy! 😂 It's the same thing as snicker bar is sold as a "snack bar" seriously if you want legit healthy stuff it simply won't taste that good. Skip the sugar entirely, then you could call it somewhat healthy

I really like the fact that you also write the amounts in ml and grams. Sometimes I find good looking recipes online but never get to try them because I don't even know what in the hell a "cup" is supposed to be. I'll definitely give this one a try, thank you.

A cup varies in volume depending on the country: a US cup comes to a little over 250ml, while a UK cup is about 236ml (although that measurement is rarely used in the UK these days). If any other countries use cups, I have no idea what volume those would be in ml.

it's usually fairly easy since alot of recipes are actually fairly old and only modified over time so they essentially just convert so many cups to so many ml then round up or down for ease of measuring. A cup is about 250ml which is why you see alot of recipes that use about 250ml (1 cup) or 180-200ml (roughly 3/4 cup). I see alot of recipes and cooking programs produced outside the US that even use table spoons, tea spoons, etc.

W.2026, the problem is a 'cup' can vary wildly due to different densities which is why I use this every time (where it matters; 1 cup milk doesnt matter if I'm out slightly when making mac n cheese) and I've started writing the conversions in my cookbooks in pencil on the sides of recipes to make it easier kingarthurflour.com/learn/ingredient-weight-chart

Honey is mostly glucose and fructose ; sugar is saccharose, they are all sugars and all raise your glycaemia, which ultimately can cause diabetes ; and they all contain a huge amount of calories. By the way sugar is extracted from sugar cane juice, which is a plant - it is natural too.

Just made these! Made a double batch since they had such good ratings, and they’re amazing! Simple to cook and the custard layer is soo creamy inside! I also made his healthy chocolate doughnuts in bun form, and they cooked perfectly together. Amazing recipes!

Just made this recipe and am waiting for it to bake up!! For anyone interested in Calorie count its about 134 cals per serving (if you cut into 16 pieces) I used calorie free sweetner (monkfruit sweetner but you can use xylitol too) which makes it 84 cals per serving super excited to try them because lemon flavoured desserts are my fav 😍

I made these tonight and they are really good! I only used 110g of honey in the filling and I used coconut flour because I didn't have any oats. The lemon flavor is quite strong but it's nice.

I didn't expect this to be that good! I used canola oil instead of coconut oil, as the later increases my cholesterol levels, but I don't think it mattered much because it just tastes amazing. Very refreshing and light. Loved it and can't thank you enough ❤

LOL, these aren't any healthier than anything else. It has just as much sugar as any other lemon bar. The only argument is that the oatmeal crust is healthier than white flour and by that same logic oatmeal cookies are "healthy". This is just an alternative recipe and nothing more.

I made these last night. I'm not a huge fan of home made sweets, but oh my Lord! This is probably the tastiest desert I've ever made! My partner is crazy about it and it does indeed take little ingredients and doesn't require much effort to prepare them and stuff. Definitely I'll be making these more often!

I’ve never had lemon bars since where I live they don’t exist at all,, so yesterday I was searching for some recipes cuz it looked super good and then started feeling guilty ;w; Gave up and let it go... But then your video popped up and well, might as well give it a try ^^ Thank you so much for this recipe! Very easy to obtain ingredients and the result looks delicious.... I made this yesterday, they are super simple and delicious, not so sweet an not bitter at all! I made in my Hofman rice cooker and the final consistency were like a cheesecake, next time, not so much time in the rice cooker for a creamyer consistency

I'm so sorry for all nuts out there running down your recipe. As a newly diagnosed diabetic, Dr said I could use raw honey and real maple syrup in small amounts. Wanted me to use oats and eat oatmeal too. Self control is is setting yourself up for success. Too much of anything is bad. I'm making these and freezing most. Only to take out one when I really want a treat. One is all I need to satisfy me. Thank you. Glad I found your channel.👍

Well, to be fair that recipe was for a pan nearly 1.5 times larger than what this one uses. The 9×9 pan lemon bar recipe in my Better Homes and Gardens cookbook - so a fairly standard recipe - calls for just over 1 cup of sugar and only 1/3 cup of butter. He chose to zoom in on an Ina Garten recipe, so yes it will be unusually heavy on the butter and sugar. That's not representative of a typical lemon bar recipe.

At least we can agree that “it can be less unhealthy “ by choosing the amount of honey and not adding as much as shown(count the percentage of the total ingredients). People, don’t get confused, sugar is still sugar, even if it comes from honey! So my recommendation is to lower the amount of honey as much as possible . But sure , compared to buying stuff at the supermarket this is much better. One can always trick the mind.... cinnamon is an excellent “fake sweetener “ 😊👍🏻 and extremely healthy 👌🏻

@LagiNaLangAko23 Stevia needs a little bit of sugar. Because in my opinion it tastes 'minty' without it. Especially in deserts and stuff. Somehow even a tiny bit of sugar/honey etc. makes it that taste go away. Still honey is way better imo. Just train a bit harder and the extra calories are burned of easily. And the bars will taste even better after training.

Absolutely amazing! I've been craving lemon bars for a few days and came across this recipe. Its exactly what I was looking for. I had to leave the crust in the oven for a few extra minutes because there was some liquid on top. It also had a strong smell of honey (which I don't like) when it came out of the oven, but I couldn't taste the honey when I tasted the bars, so it was perfect! Thank you so much for sharing this recipe. I will also try making a keto version as well.

The problem with sugar is not only the increase in blood sugar level. The problem is also it's empty calories, calories with no nutritional value. If you take honey it is indeed a little better, because honey has a nutritional value.

@@ShakeITyEA I am developer for confectionery. At 180 C and 10 minutes about 50 - 60 % of vitamins on average will remain. The inside of a dough or cake never reaches the 180 C. Other bioaktive plant components such as organic acids and phenolic compounds will remain. I'm not saying eat tons of honey, but it is better than our refined sugar with nothing inside.

I know sweeteners aren't as "natural" as honey but there's many to choose from and I recommend cutting down on the bee's sugar with some of them. Here I use Stevia and acesulfame potassium.

@@sleepdoctor3433 The only known issue with the use of Stevia is that it may cause sterility. "natural sugar" will cause your pancreas to fail and you'll get diabetes soon. Stay away from sugar, remember that, carbohydrate turn into glucose into your system, if your diet is rich on both (carbo and sugar), you are not going to be healthy for a long time. The right choice is to cut sugar and fake sweeteners from your life, but if you can't, just cut the sugar and use stevia instead. The rest is poison.

What i've noticed from most comment is that it's all about calories and sugar. Guys.. let me tell you a secret. Even tho you eat the same amount of calories and sugars, you'll feel much better if you change your whole diet to foods like this with natural and whole ingredients . Sure, you won't get leaner, but that's not the only thing health is about. If you want to get leaner, eat less calories.

"Natural" (if you can call honey from a shelf that) doesn't always equal healthy. I suggest you google the subject a bit before believing everything you hear and see on a youtube video.

@@HowToCookSmarter i used 50 grams for the crust and 100g for the filling, but the sweetness can change from other types of Stevia like ( white powder, green powder, or liquid) so i think tasting it before cooking and adjusting it is the way to go 👍🏻 thanks for help! @PoochMount18 Honey isn't fundamentally healthier than table sugar. Its sweeter due to fructose, so you can get away with using less, but high fructose corn syrup could be used similarly and be just as "healthy" (i.e. not explicitly healthy at all). Coconut Oil is higher in calories than butter and less nutritious, it also has higher saturated fat (The "bad" one). The main benefit of coconut oil is that it has no cholesterol or sodium, its only "healthier" for you depending on how you live your life, you still need cholesterol and sodium to live, the west on the whole consume too much. This recipe is a healthier alternative mainly due to the fact that he used the high calorie ingredients sparingly. Less sugar (see how he said its not that sweet) and he could afford to use less fat because oats and oat flour need less fat to stick together. The ingredients are not healthy, his method and the way he has used the ingredients is just more health conscious.

Just made this today with the help of my granddaughters, we had to use different ingredients. No access to oatmeal flour in the stores. No food processor or coffee grinder to reduce oatmeal (Quaker Oats). So the substitute was Graham Crumbs for the oatmeal flour. Could not buy coconut in the solid form so we bought liquid Coconut oil. We used raw honey which is normally solid so had to melt in the microwave. The end result was a very tangy desert, definitely more on the bitter lemon side and only able to eat small portion. Anything larger than two bites big was a struggle to get down because of the bitterness of the lemons 🍋 I doubt it will be made again but had fun with the children baking together and making memories.

Coconut oil in solid form vs in liquid... Normally, this oil is solid at 20°C and it melts at 25°C. In the video, the oil was mesured in solid form, but as you, I mesured in liquid. It seemed greasier in my try. Now I'm thinking if the density is different from solid. Didn't you notice it in your dough?

Lissica LaThairyble The dough turned out fine, only thing we had to do was bake for longer. After ten minutes it still had oil running on the top. We extended baking it for another 7 minutes and all the oil disappeared. Once cool it was nice and firm. Also with the second bake time we had to extend it because the middle was still soft compared to the edges. We added another 5 minutes by which time the middle had cooked and firmed up. Tried some today and found it a little more palatable when very cold, but still very sour from the lemon. We had fun doing it but doubt it will be done again.

I was low on oats and didn't have enough to put into the custard. I substituted it with 4 teaspoons of coconut flower and 2 teaspoons of regular grated coconut (mix well because otherwise it'll lump). It gives the custard another texture of you let it fully solidify, a bit closer to cheesecake. Quite nice. I've also taken to just adding 4 teaspoons of grated coconut to the bottom because coconut + lemon is simply the best flavor combination.
