If I am pumping up lake water into my system including sediment & charcoal filters... Is it ok to leave the filters attached for unused weeks at a time or will bacteria grow? Should i disconnect and dry the filters when i leave the cottage?

Not necessary at all, we have thousands of families with systems like your that leave the filters but the UV light must stay on!

Could you do a video on kangen water? Is it better to have one of those systems compared to, say, an RO system?
