Ramen has been Andy's obsession for many years and he has spent that time developing recipes to satisfy his cravings. The shoyu ramen broth is our family's favorite. It is light and clear, but absolutely packed with umami intense ingredients. Paired with our favorite ramen noodles from Sun Noodle, it is a dish that is hearty and heartwarming. Best of all, it's quick and easy to make with a pressure cooker.
For the broth:
1 whole stewing chicken or 3 lbs chicken bones
1 piece kombu (amzn.to/2CMcSVV)
1/4 cup dried scallops (optional as it has strongest fishy taste)
1/4 cup dried anchovies (amzn.to/2F41Zgz)
1/4 cup bonito flakes (amzn.to/2F77b3g)
1/4 cup dried shrimps
1/2 inch ginger thinly sliced
For the tare:
1 cup soy sauce
1 piece kombu
1/2 cup mirin
1/2 cup sake
8 scallions
1/2 cup bonito flakes
1/4 cup sugar
1/2 inch ginger thinly sliced
8 gloves garlic crushed
Instructions:
Put all the ingredients for the broth In a pressure cooker. Select the "soup" setting, and set the timer for 90 minutes.
Strain the broth through a colander or fine-mesh sieve. Skim the fatty oil off the top of the broth. Set aside.
Place all the ingredients for the tare in a medium saucepan over high heat. Bring it to a boil and then reduce heat to low, and simmer for 10 minutes. Strain the mixture through a fine-mesh sieve into a bowl.
In a large bowl, add 2 tablespoons of tare. Ladle about 2 cups of the broth. Place the cooked ramen noodles. Taste to see if the broth needs more tare.
Add any toppings that you like, such as chashu (see my recipe linked above), menma, corn, toasted seaweed or soft boiled egg. Garnish with green onions.

Hello I'm so happy I found your channel !!! I just got the Ninja foodi and was looking for pressure cooker recipes for ramen. My husband is looking to do a tantanmen tonkatsu ramen Do you think you'll be making a video on that? We will definitely be trying this recipe along with the pork belly.

looks yummy! I would add some pork too for broth, then it would be close to my favorite ramen place....The seafood adds a nice flavor that's different from a tonkatsu style, I think more complex but not as rich...,both are good just different :)

Thanks Erin! The dried scallops are hard to find and the most expensive. You can omit that and the dried shrimp and start with the most common ingredients.

Viajera82 for this video, I bought pre-made noodles. The brand is sun noodle. I also make my own ramen noodles. Hope to find time to edit the video soon!

Where do you buy the dried shrimp and tiny scallops? I have a small Japanese grocery store near me that may have them and also a decent Korean grocery store. Not sure I've seen these at either. The recipe looks great and Sun ramen noodles are great. Thanks!

Thank you! We got them at the Chinese grocery stores. Dried scallops are a little bit pricey and some people don't like its fishy taste. If you couldn't find both, just omit them and add a little bit more bonito flakes and anchovies. Hope that helps!

Hi Brandon, you can omit dried scallops and dried shrimps, but all other ingredients are easy to find online. Kombu and bonito flakes are must-have.

Just use a regular stock pot and simmer for 5-6 hours. Pressure cooker is just to speed things up. You don't have to have a pressure cooker to make this :)

omg! I just got one a month ago...I love it so much I want to get 2 more. True set it and forget it till you are ready to eat!! For soups, I feel the quality of the chicken stock is superior...all the flavor is forced out without heating too long. Chicken stock is not like pork or beef stock. It can get over cooked and become less fragrant.

May i know how much is 1 piece of kombu? The Kombu i bought is 1 whole piece of 100g, do i add the whole piece in?

I just want to ask. What is the substitute for bonito flakea because its expensive.

No there's no substitution for bonito flakes. It's a very basic but important ingredient in this recipe. You might skip other seafood ingredients, but this is a must. It has some fishy taste and lots of umami flavor. You might want to use more shiitake mushrooms or even MSG, but it's not going to taste the same way.

I guess you can probably use hondashi. Its about $7 on amazon. Probably cheaper at your local asian store.

I made this a few days ago and it didn’t have the richness I was looking for in ramen. I used a stewing chicken and the smell of the broth was awful, almost like manure. I was I suppose to blanch it first to get rid of that smell and gunk before putting in the pressure cooker?

Shout ramen is usually a thinner soup. You may be thinking of tonkotsu ramen which has much more collagen from pork hocks. We will be publishing a video for that type in the future. As for the stewing chicken, that is definitely odd since the ones we use don’t have that problem. Try using a different brand or just a regular chicken.

I bought pork bones also i have chicken bones, i've never made this but i'm going to try i have always seen people use pork bones also should i not have gotten them? i have the kelp and i'm soaking it right now over night am i not supposed to do that? please help thank you

Yes, you can definitely use both pork and chicken bones. It'll give you more flavors too.

Ice or Rice OK so I’m soaking the kelp and I have a 6 quart instant pot so I put the pork bones in the chicken bones in and those flakes because I bought those two and my onions my ginger my garlic how many cups of water do I pour in from the soaking of the kelp because you said if you soak the kelp all you have to do is pour the water in do I pour it in the same time I put it all together and how many cups of of the kelp water do I put in thank you

Ice or Rice And I do you boil the pork bones for a few minutes and then clean them real good and then put them in the instant pot right because I want to clean all the nastiness the scum the foam I have seen a lot of videos where they do that so I thought I would do that to first and then put everything together in the instant pot

Yes, you did the right thing! Always blanch the pork bones first and clean the scum. that'll give you beautiful broth. Great job! Hope that turned out great!

Substitute. Be creative. What's the cheapest meat where you live? Dice it and add it.
