biscuit base
could also use tennis biscuits and butter to make your base
Ingredients tart shell
125g butter
75g icing sugar
1/2 teaspoon salt
1 egg
1/2 teaspoon vanilla essence
250g Cake flour/2 cups
refrigerate for 1 hour
roll out and bake for 15 minutes
lemon filling
1 can condensed milk
3 egg yolks use 4 if small eggs
1/2 cup lemon juice can use freshly squeeze/could add more or less
Add to biscuit base and bake for 8-10 minutes
meringue
4 egg whites
1/2 cup castor sugar/super fine sugar
1/4 teaspoon cream of tartar
add meringue to lemon filling and return to oven for further 10 minutes or until meringue is lightly brown
