▶Ingredients (bottom diameter about 55mm Muffin Cups, about 6)
-73g Eggs
-53g Sugar
-16g Honey
-1g Salt
-60g Vegetable Oil
-93g Heavy Cream (38% Milk fat)
-71g Cake Flour
-33g Cocoa Powder
-30g Almond Powder
-3g Baking Powder
-82g Chocolate Chips
1) Beat the eggs with a whisk and mix slowly with sugar, salt, and honey.
2) Add grape seed oil and mix slowly.
* You can use any vegitable oil which has no scent.
3) Add heavy cream and mix well.
4) Sift together the flour, cocoa powder, almond powder and baking powder and mix with a whisk.
* Mix a lot and you can get a tough and hard muffin. Mix lightly just until you don't see the powder.
5) Add chocolate chips and mix with a spatula to complete the batter.
6) Bake 160 degree Celcius 25 minutes in a preheated oven. (Unox Convection Oven)
* Preheat the oven sufficiently in advance. My oven is convection oven, so the heat is very strong. If you use a home electric oven, you will have to raise the temperature by about 10 degrees.
