Coming from world famous Bensonhurst Brooklyn closest place you can get besides Italy. I got to say I like your technique. I never put the Parmigiano Reggiano in this dish kills the wine taste.
I remember that from a visit to Italy 30+ years ago with my grandmother. She had a lovely shrimp and pasta dish and asked for cheese. The server (very kindly) explained how appalling that was! I am going to try this recipe soon without the dairy. I think it will still be delicious.
