Ingredients
2 eggs
½ cup torn spinach
2 Tbs diced tomato
2 Tbs milk
1 Tbs sliced green onion
2 Tbs butter
salt and pepper to taste
Directions
Step 1-
First, have your vegetables cut and set aside.
In a bowl, beat the eggs milk, and stir in salt, and pepper.
Step 2 -
Heat butter in a large skillet, saute green onion and spinach over medium heat, next add tomato cook for less than minute. Pour in egg mixture. As eggs begin to set gently pull the eggs across the pan with a spatula, forming large soft curds.
Continue cooking lifting and folding eggs, until thickened. Remove from the heat. Serve immediately.
