Ingredients
• 4 chicken thighs, thinly sliced
• Salt
• Black pepper
• Garlic powder
• Onion powder
• Paprika
• Cumin
• Oil for frying
• 1 cup shredded cheddar cheese
• 1 cup shredded Monterey Jack cheese
• Salsa
• Fresh cilantro (optional)
• 4 large tortillas
• Olive oil or butter for cooking
• Sour cream for serving
Instructions
1. Marinate the Chicken 🍗
• Thinly slice the chicken thighs.
• Season with salt, black pepper, garlic powder, onion powder, paprika, and cumin.
• Marinate for 30 minutes.
2. Cook the Chicken 🍳
• In a pan, add some oil.
• Pan-fry the chicken on each side until fully cooked.
• Remove and set aside.
3. Prepare the Fillings 🧀
• Mix together the cooked chicken, cheddar cheese, Monterey Jack cheese, salsa, and cilantro (optional).
4. Assemble the Quesadilla 🌮
• Lay out the tortillas on a flat surface.
• Evenly spread the chicken and cheese mixture over half of each tortilla.
• Fold the other half of the tortilla over the filling to form a half-moon shape.
5. Cook the Quesadillas 🍳
• Heat a large skillet over medium heat and add a small amount of olive oil or butter.
• Place the folded quesadilla in the skillet.
• Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
6. Serve and Enjoy 🍽️
• Remove from the skillet and let cool slightly.
• Cut each quesadilla into wedges and serve with sour cream.
