Just a tip to anyone who loves the convenience of frozen rice, but not the cost... make your own! I always make a double or triple batch of rice, then I freeze the extra using silicone muffin molds. It makes about a 1/2 cup to 1 cup serving (depending on the size of the mold, how tight you pack it, and how high you mound it). It's easier if it's a sticker style rice (I usually use white jasmine rice, made in the rice cooker). Then after it's frozen, I peel them out of the molds and put the little frozen rice pucks in a gallon ziplock bag. Then I just pull them out and microwave as needed, super easy and quick!

I’m making this for lunch today. I ran out yesterday after watching this video for tempeh and a cucumber. I have a head of leaf lettuce I’ll use but will look for those romaine boats next time I go to Fred Meyers.

Love, adore, worship, would marry tempeh, but don't have enough recipes for it. Thanks! Will make this tonight. As for can openers, also love my USA Made EZ-DUZ-IT can opener. To avoid sharp edges, don't open it all the way. Leave a cm attached (you can still drain liquids) and jam the lid back into the empty can. I found the other brand much harder to twist.

Have you heard of the Rice law? They passed it in China years ago. Because supposedly rice grows mold really fast in as little of 24hrs. Can you research that and get back to me with an opinion? Thanks.
