It really depends on the blade Flavian. It needs a nice big wide blade to mix everything together. If you use a mixer with a small blade, it may just mix whatever is around it - you're better off just kneading it by hand in this case.
I'm using Almond, but I do love Cashew. I usually grind it with some extra icing sugar to absorb the excess oil. I haven't noticed that mine left any additional oil, but you could wrap them individually in cling film. I do that anyway with my almond marzipan.
