I finally made this and it is wonderful... It really is "So Easy A Child Could Make It". This is now my go to sauce. Some day I'd like to take a cooking course but, wait, I have a subscription to the best teacher on the web and it doesn't cost me a dime.🍷🍷🍷🍷

I just made this sauce tonight with Port (Taylor brand-very smooth on the sweet side) and your Balsamic Fig vinegar. It was DELICIOUS on a slice of the bacon wrapped meatloaf and garlic mashed potatoes that you taught me how to make. I am eating FIVE star meals at home. Thank you Chef JP. I didn't strain it because I like the shallots and herbs on my food.

I bought port with the intention of making this sauce. Since you should only cook with wine that you are willing to drink, I had a sip. The next thing I knew we had finished the bottle! I’ll buy some more port and try again. 😊

Lol! Chef said DON’t add every herb just because you have it. That is exactly what I did because I had too many herbs in the refrigerator that were going limp. And he said a little bit of sage. Yes I added all the sage I had and it is more of a sage stock that will be fine in the freezer until Thanksgiving! Thank you Chef, for your passion enthusiasm and commentary!

Thank you for your recipe for pot roast. With your help, today I slow cooked a 3 lb. roast, browned roast in same carmelized onions, 5 cups beef broth (can-boxed, added fingerling potatoes, carrots, 1/2 cup olive tapenade, 1/4 cup marinated artichoke, 1/2 cup wh.wine (didn't have Port wine (I'm Portugese so that's important.) I call it my Mediterranean pot roast! Yes, it's delicious. Thanks.

Love this guy hahah, "it gets better every year", such a joy for life and actualy has value to it, unlike when someones like 20 years and says it, like yeah youre 20 no kidding, everything seems great. Saying that at his age is a true testament of charachter in my book

This is a man who enjoys food and gets genuinely excited about making it - a true inspiration to people (like me) who want to up their cooking skills. This is an excellent sauce to pour over a filet mignon - at least it tasted great over mine, but my wife would not let me rub all over my body, as you suggested :) I also urge everyone to watch Chef JP's video on the proper way to cook a steak, starting off by salting and putting in the refrigerator for 24 hours before cooking. I did just that, and the steaks were tender and delicious! Thank you Chef JP.

My kitchen is in the process of being remodeled, but this recipe right here is gonna be one of the first things I try! My mouth was watering as soon as the 18yr old vinegar came into view. I made the beef stock a while ago (not 17 years) and it is waiting patiently in my freezer. It’s going to be amazing! Thank you friend.

Hello Chef, I made this sauce this evening and served it with a pork tenderloin (brined according to your instructions) and it was fantastic. Side dish was risotto Milanese with sautéed mushrooms. Just made it and had it with a lovely porterhouse steak. But I did also drink a few spoonfuls and I could have finished the extra 500mls I made with a bit of crusty bread. Absolutely delicious. Sauce/ Soup.

I'll be making this soon. That goes without saying. One feature I like about Chef Jean-Pierre's videos is what I learn about cooking from his comments outside of the specific recipe he's teaching. The alternatives, the substitutions, why you should turn off the heat when adding butter at the final stages, etc. There's gold in those hills, as the saying goes.

Hi Chef Jean-Pierre, I have found your videos couple months ago on RU-vid. Thank you really really much. You always make me happy when i see that there pops a new video out on your channel. I can laugh and also feel like i am watching a real friend doing what he loves. I love your videos and have tried some recipes you showed your YT community. I also tried to make the beef stock and went for a 24 hours slowly slowly cooking like you recommended it. I think i had a to tiny Pot ( about 15L) after that it was more like a sauce but it still tasted so good and my girlfriend really liked it. Then I showed her your YT channel anmd she also thought your a funny man. I just want to thank you that you entertain us and that we maybe can support you by watching your videos.
