Random tip… Instead of shucking the corn first then microwaving… Microwave first then cut one end of the corn off and the silk comes off so easily. Just squeeze it out of the husk like a tube of toothpaste.

If $5 per day is an extreme grocery budget challenge, then that explains why I always struggle to afford good meals! My food budget isn't much more than that, all the time. Thank you for this video!

If you just mash that corn before adding the egg a bit you can actually leave out both milk and flour or at least use less of them because the squash will provide moisture and the corn will have leaked som of the starch. And for flavouring you can add a litte bit of heat if you like and have. And uf you have a small drainer for tealeves you can put some powdered sugar in that to dust the french toast.

I imagine that if you broke down the actual cost of ingredients used and consumed by you alone for one day, the total price would be within the $5 limit. Three eggs out of the price of a dozen, $0.33 for half the bread, leftover cottage cheese and a second serving of bruschetta… what you could apply toward future meals has to balance out the cost of the pantry items utilized. Not only does this count for fun but it is a win for the challenge in my book 😊

The best thing about your videos over a few others IVE WATCHED ,is that your voice is calm enough to listen to for the 15-20 minutes you talk and explain all the ins and outs of what your doing AND ……..when you cook ,,, these budget meals look like hardy full meals and not colored water with noodles. Anyone can make depression meals that just takes a pot of water and 1 potato. Lol Your very interesting, budget friendly, flexible, and make real meals for ppl trying to feed a family on a dime and not just exist meals with no flavor. GOOD JOB

Stale or day old bread, makes the best french toast.& near Christmas, eggnog makes it quick,I usually add an extra egg to the nog.

My dad died when I was a baby, my mom was almost never around, and the rest of my family was too worried about me getting burned or messing up to teach me how to do anything. I got married the first time at age 20 and the second time at age 25 (still going strong at age 33!!) and I still have firsts in the kitchen/house. From cooking to cleaning, purging belongings. The first time I made meatloaf I invited some missionaries to have dinner with us… it was raw and burnt at the same time. Thankfully more than 10 years later my meatloaf is kinda yummy but it’s proof that everyone is still learning. This channel has taught me so much and I have started getting my own kids to watch as my oldest child is 13 and getting more independent.

Hi Mindy! Just found your channel and loving your content. We make these fritters all the time- it’s super helpful to grate the zucchini separately and salt it which expels the water. You can squeeze out the water with a paper towel. It helps keep the fritters more “hash brown crispy.” 🤣 I make these for the kids all the time so they can have hidden veggies. @@jeantowley2171 Hi! Here’s the base recipe I use. I’ve done it with a ton of different types of vegetables. So so easy! Just 3 carrots 🥕 boiled until soft; 1.5 cups broccoli florets 🥦 steamed until soft; 1.5 c cheddar cheese 🧀; 4 eggs 🥚; 1 cup breadcrumbs; 1/4 onion 🧅 finely diced. I Smooshed the carrots and broccoli with a potato masher, then mixed it all together and formed them into little patties. Bake at 375 for 10-15 min, flip and bake for 7-8 min.

Oh all those meals look delicious! For the last meal, when I make that, Julia Child has taught me, (from her cookbooks) to pan sear the French bread in EVOO. It brings it to a whole new level. Lots of flavor. That should be allowed since that is a staple item. As for the 64 cents, I feel that tax should be left out, u were still in ur $5.00 range lol!!😁🥰. Great video

I really like what you came up with for your meal plan. Since your partnering with Miranda from Running on Plants I thought I would mention that you could replace the eggs with tofu to make a vegan cottage cheese and do a tofu scrambled "egg" with toast for breakfast. Thank you.

Sweet corn can be eaten raw (we live in Iowa, the kids like to do it while we pick corn!) But I think it would just be easier to work with/a little mushier after cooked at least for this kind of situation.

I love Spanish potato tortilla. It is delicious and so filling. I cheat and after I slice the potatoes I microwave them laid out on a plate flat for 5 minutes to speed up cooking time. Baked potato topped with baked beans and sprinkle of cheese (UK recipe) is so good too. Egg fried rice with veggies is delish and one of the cheapest foods around. Key is cook rice 2 days before and keep in fridge for best effect. Another thing we love is Swiss rosti which is a potato pancake topped with cheese or thin slice of ham. So many awesome, cheap meals from other countries.

These are some great meals, nice to see something different from the usual oatmeal + beans and rice (not that there's anything wrong with that, lol). And I'm guessing you had enough leftovers that with just a little more corn and squash, this could easily stretch to two days for barely any more money. Maybe even the same cost if you swapped the mango for cheaper fruit. Well done!

Cottage cheese and tomatoes is one of my favorite combinations. I know you've done cottage cheese on potatoes before, add an additional handful of chopped tomato as well and you won't regret it. It makes a fast, easy and delicious meal.

The "Corn Cakes" are almost like Cachapas, it's a Venezuelan 🇻🇪🇻🇪 meal, you just needed to add Sugar to the mix (less the zuquini) and it would'v been Cachapas jaja we aslo eat it with cheese ( Venezuelan cheese)

My Walmart had bi-color fresh corn for $.10 per ear or a crate of 48 ears for $4.80 a crate. 10% off with my discount so I bought a crate and I plan to blanch and freeze the corn in quart sized baggies. That’s going to be a lot of food for dh & I. Love your channel. Thanks for sharing with us.

Some sort of syrup should also be a staple. Maple, pancake, or even just basic honey. It has multiple uses.

Funny story, Melissa, that was actually my initial plan when I picked up the cottage cheese in the store. I went a different direction, but cottage cheese on a baked potato takes me back to my college days when I ate that meal all the time with my roommate!

@@SeeMindyMom haha! Too funny! If you like cottage cheese on a potato, I recommend trying beans, cottage cheese, spring onion and a little chopped up ham on a potato. For the beans, since you go to Aldi, I’d recommend their pork and beans as they are in a tomato based sauce vs a sweet bbq one like baked beans are. My husband is British so beans on a potato is a big favorite in my house. I like the coolness of the cottage cheese and the flavor of onion as well on mine. Really delish and filling.

Am I the odd man out? I don't peel my mangoes. I cut and then do the criss-cross cuts to cube & pull away from the skin... also -what griddle do you use? I've been looking to buy one and the reviews are all so mixed out there.

About 30 years ago, when I had to start learning to feed myself 😅, I started out with just salt and pepper .. now, I don’t think there’s a spice that I don’t keep on-hand 😅 it boggles my mind when someone says they don’t have “this or that” 😅 but then I think back to My beginning.. 🥰

Mindy, maybe for a video you can do a $10 budget and not use anything extra from the kitchen? Like include seasonings/oil/butter. I agree with the fact that we all have most of those things in our kitchen but that might be interesting to watch!!

If you had found one of those little half dozen egg packs you'd have been way under the 5 bucks. So making that brushetta - that looked delicious especially with the cottage cheese. Right up my alley!

I would have added some cottage cheese into the corn fritter mix, Also would have made a curry with the other veg. Didnt even think of bruschetta, Nice call on that, they charge a lot for it at restaurants and its only like 4 ingredients.
