Eggplant stuffed with minced meat and bulgur-quinoa mixture
Ingredients for 4 servings
600 g aubergines (2 large aubergines)
Salt
5 tbsp olive oil
175 Bulgur quinoa mixture
2 onions
2 cloves of garlic
1 zucchini
400 g minced beef
2 tbsp lemon juice
2 tbsp tomato paste
Pepper and chili flakes
125 g mozzarella (45% fat in dry matter)
4 stalks of parsley
60 g chili sauce (4 tbsp)
