Eating Chinese Michelin Bib Gourmand Intestine Glass Noodle Shop in Chengdu

In this video, I went to a Michelin Bib Gourmand (Gan Ji Fei Chang Fen) intestine glass noodle in Chengdu, Sichuan, China. This place serves a specialty called Fei Chang Fen (intestine glass noodles), there are two types of broth to choose from, red and clear, I chose red. You can add additional toppings such as intestine pieces or Je Zi, an intestine knot with oil inside. There is also Guo Kui which is a classic Chengdu specialty, bun with sesame seeds and sometimes stuffed with meat, pan seared and then baked until crispy and flaky. The Guo Kui is best eaten together with the glass noodle.

Fei Chang Fen (Fei Change: intestine, Fen: glass noodle, although it doesn't have to be but in this case it is a type of glass noodle made with sweet potato starch) with additional Je Zi (intestine knot)

😆 We use the term fly restaurant here but it's pretty much the same thing. Or maybe I should say greasy table because that's almost always the case, like literally, haha.

I was hoping that you would dip the guo kui into the broth. That's what I would've done too. It looked delicious!

I wonder if I can find something like this in Seattle, sounds insane. I’m not sure I’ve had intestine before.

Ah! Intestine is great! It's such an essential part of Chengdu people's diet. There are so many different ways of preparing it and so many different restaurants serving different varieties of it in Chengdu. Idk about Seattle but in New York you could find some Chinese/Sichuan restaurants serving intestine dishes. You might be able to find some in Seattle too cuz I know there are plenty of Sichuan restaurants there but you might need a Chinese living in Seattle to tell you more. As for this type of intestine glass noodle and other varieties of intestine street food, you can only find them in China and mostly in Chengdu. I will be showcasing some more varieties on this channel. But enough said you should definitely give it a try!

What do the intestines taste like? I Iike offal and organ meats but never tried intestines, do they actually have a poop taste or is it just a normal offal taste?

Intestine’s taste varies depending on the animals and pig intestine is amongst the stronger ones. It is thicker, has a slightly bouncy texture and a special flavor from the offal. Some preparation leaves more fat in the intestine and had a special rich aroma. It is not a poop taste. But that being said, it requires special preparations to clean the intestine thoroughly, intestine not properly cleaned would have a bit of the poop taste which is a sign that whoever prepared it, screwed up.
