The high level of citric acid in a key lime is what cooks the raw shrimp or fish. Always salt your meat for a 1/2 before putting it in lime. We never put mayo on the tostada. That in my Pacific coastal ranch town is a cardinal sin. Cocineros or Sierras are best. We get fresh shrimp with the head on it for aguachiles and my recipe is the bomb.

3 Days ago I wrote and made a challenge,I also made the same challenge about 6-8 weeks ago!!!! And nothing... challenge is probably too intense- spicy with no drinks aloud...I have the recipe and video to see if this guy can do it? But I'm guessing that I'll be looking at this message a month from now a still no response... it's better to be a magical person then to do a challenge that is probably crazy hard
