Hey there, so far so good 🤞! I bought three of those ones in the end and daisy chained them together. It's all working well 🙂.

Yes you could but you could even consider a 8Ah battery instead which would be cheaper. It depends on whether you intend to stick with 40w panel or expand at any point and how much energy you need to store / use. There are also some solar panels which output straight to usb which may be worth considering.

Would 8ah kit run a cool box for 8 hours

Hopefully you have had the answer by now. There isn't a straight forward answer as it all depends on how much you can afford, plus the size of the panel which you can fit somewhere. There is some limitations with the size of the panels and size of solar controllers you can use. I would personally suggest asking the seller as they will then help ensure you get the right set-up. I would imagine they would suggest 100w or 120w.
