You mean the one at 8:02 that is Tamago or egg. It’s like a desert the egg is sweet and savoury. You probably can get it at your local sushi restaurant but some Omakase course have their own take on their egg recipe thus taste could vary.
Some sushi bars uses dark rice vinegar instead of white/clear vinegar to season the rice. It depends on the chef's preference, the location of the restaurant where famous dark vinegar may be produced, or the time of the year when fresh productions of good dark vinegar are marketed.
