Avocado cake loaf
Who would have thought that you can bake a cake with avocados? they add so much moisture to the cake.
And look at that lovely natural green colour .... a taste so unique you have to try it and it’s so easy !!
Ingredients:
1 1/4 cup/150g plain flour
1/4 cup/30g cornmeal
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup/180 ml milk
1 teaspoon vinegar
1 large ripe avocado
1/2 tablespoons lemon juice
1 teaspoon vanilla essence
1/2 cup/120 ml oil
3/4 cup/135g sugar
1/3cup/ 60 g white chocolate, chopped
In a bowl whisk together milk and vinegar and leave for 30 mins to make buttermilk.
Blitz avocado and lemon juice to form a paste.
With an electric whisker, whisk the oil & sugar. Add the avocado paste, buttermilk, vanilla essence and mix.
Sift in plain flour, cornmeal, baking powder, baking soda and salt.
Fold the flour into the liquid to form a smooth batter. Add the chopped white chocolate and fold it in gently.
Line a loaf tin with greaseproof paper and oil
Pour in the avocado batter and bake in a preheated oven at 180C/350F for 25-30 minutes or till a skewer inserted comes clean.
Cool the cake, demould and slice.
