Hi Laura, thank you for your videos. You cannot imagine how heartwarming they are. My mother recently passed away, she is beautiful woman and passionate about her food and family just like you. I would cook for mum and vice versa, my cooking never compared to hers. Before she was taken ill she started teaching me her recipes (as if she knew what the future was bringing). Sadly there are still quite a few that she never got to share with me. "Now you can always eat well" she would say to me after cooking together. Her recipes were passed to her from my nonna and zia and now to me. I know I am broken but until I start cooking and eating, watching you brings back such beautiful memories. Thank you.
Laura, I made this for the first time and my wife loved it as well as I. Thank you for making me look like a master Chef with such an easy recipe!! Lou
I am so in love with this recipe/method. I make it all the time now since I re saw it on Simply Laura. Thank you soooo much for sharing. Love you and all your recipes
This recipe is so basic, but really phenomenal. I love to have it for breakfast and serve it over old fashioned oats. I also add some fresh basil and parsley at the end. The perfect meal!! Thanks so much, Laura!
My friend's grandma was Spanish (born and raised there) and she made this dish. Only the spices were a bit different. But eggs in tomato sauce are so delicious. Everyone should try! You hit home run again, Laura.
Laura, I just found your channel a couple of days ago. You have such a wonderful personality! And I appreciate how you mention over and over about using what's on hand. (My family doesn't understand how I can walk into a kitchen and make a dinner out of practically nothing.) Thanks for the recipe. I look forward to cooking it tonight.
OMG, you just took me back to being young and sitting at the table enjoying this very dish... it is such a comfort food now, and for some reason I never make it for myself...
My dad would always cook this when I was a kid, but I didn't know the name of the dish until now!! Only difference is that he adds peas to the sauce, so good!! Thanks for the recipe! xxx
Lakisha Calzado It is so cool to know about other cultures, especially about food. In Mexico we call Huevos Rancheros a dish made with fried eggs on top of fried corn tortillas, topped with salsa: which is basically green chilies, tomato, and onion all diced and cooked to make them soft. You serve them pipping- hot for breakfast or early lunch. Buen Provecho!
Hey Laura... I made this last night. I had a prosciutto marinara sauce that I used the previous night for baked ziti. It worked just fine. I broiled it instead of covering it on the stove top. Gave it great color! Thanks for the great ideas! I love your show on youtube. I am a subscriber, and a chef as well. Cheers!
Looks like a fun and easy recipe! The one thing I really enjoy, is that your (one of a few cooks I see on the net) that uses fresh cracked pepper. It can make all the difference in the world.
Laura, I made this tonight for dinner and served it over the brown rice like you did. Oh my geez that was one of the best dinners I have had in a long time. It was awesome!!! Thank you for another fantastic recipe.
I just made this tonight and it was delicious. I added cubed eggplant because I had it in the fridge and this recipe reminded me of Rachel ray's ratatouille with poached eggs. I sautéed the eggplant in bacon fat, added a little olive oil and served it over yellow rice! I used basil instead of parsley. To die for! Thanks Laura
I have made this twice within the last two days haha Thanks for the inspiration and cheap easy meals for the college kids! Much love from the midwest :)
My mom did that when I was a kid. I miss this recipe. My ancestries is Italian and my mon is the third-generation of an Italian family in Brazil. I loved eating.
Hey Laura! Just wanted to tell you I've been making this recipe once a week for the past three months! It is so easy to make, and succulent! A hit with the whole family as well. I've been telling everyone about this amazing egg dish :)
Made this last week. My husband fell in love with it! I used fresh tomatoes, so I added a pinch of sugar to cut through the acidity. Thanks so much Laura for your great recipes! :)
I tried this. my first time using passata. and also i ate with polenta (also from your channel). both are delicious!!. my boyfriend loved it! thanx for the simple yet wonderful recipes!
HI!!! I tried this recipe and omgosh its delicious!!! I never would have thought of adding bacon to sauce like that. Your awesome. I love trying your recipes!!!
Hi laura, it looks very good! I was just wondering if you could make a vitello tonnato recipe, i love it and I think that you could make a wonderfull recipe for it ;)
oh my love your videos i just came across this a few days ago meaning your channel... and let me just say your are much more fun to watch then some of the cooking shows on the cooking channel.
Made this for my grandma - who is usually SO fussy about food - we had the meal in silence apart from "mmmmm"-s all around! Loved it! Made it with a finely chopped onion instead of the bacon. Amazing, am definitely making this several times a week xxx
These are SOOO GOOD! I just had one for breakfast and I think I'm going to literally have another for lunch AND diner. Your the bomb, Laura. I don't know how I survived before.
OMG! laura this is a dish my mother use to make me when i was a child! i remember that it was so delicious! thanks for sharing it so that i can make it and have my mom taste it!

Mmm so good. My mom makes this a lot but she uses basil and pancetta. She puts it over white rice usually but sometimes I eat it over spinich or asparagus :)
Laura, about a week ago I found Passata in a near by mini-market ... I was so excited and bought a can. I tried it with potatoe alla pizzaiola. It was pretty good xx
Made this for lunch today for the family and it was a hit! All I used were some leftovers from last night and it was ready in a few minutes :) Thanks Laura!
I ate this for supper tonight and let me tell you--it was SO good! Tomato sauce and eggs are wonderful together. Who would have known to do that. This is my new go-to! :)
Hi Laura im from Albania me and my daughter watch you all the time! You are so amazing and your cooking has helped us alot.Thank you for sharing your great idea's with us.Your the best!xoxox Liljana and Klara
What a coincidence. This is what I had yesterday for dinner (except it wasn't on rice, but on toasted bread). When I watch all these videos I realize how much I am lucky to be italian. Even if government, economy and whatsoever disappoint us, culinary and cultural traditions are things they can never take away from us. Ciao Laura, un saluto da Napoli!
I learned this dish from my mom. We called "Huevos Ahogados". I had completely forgotten about it. Thanks for bringing back the memory. I'll definitely try it at leas once a week.
Can't wait to try this!! Im a veggie, so I'll leave out the bacon but I think it'll still be great-- even though I really have no reference for what this will taste like! So nice to have recipes that use just the staples you always have on hand. Love ya, Laura!!
Try this today it was awesome I used a little bit of turkey meat and it came out wonderful. I also made your potato rolls wonderful combination in my opinion. Loved it
This is a very famous food in Mautirius. we cook it with fresh tomatoes. The base is onion ginger garlic, cumim powder, the add fresh tomatoes with a bit of thyme the when the sauce is bubbling at the egg of course dont forget to add fresh chilli and finish it with coriander, We call it 'rougaille di eouf' simple eggs in tomato sauce. Its is soo yummy!! Thank Laura you remind me of my childhood.
What a clever and delicious looking dish! And economical. I've got to give this a try soon. Laura, please tell me what brand and color of lipstick you're wearing in this vid. I need it!
Wow Laura, thanks again; this gives me the idea of making Morrocon spicey meatballs again. which is kind of simular to this Italian dish I notice...also with the eggs and also eaten with nice bread for dipping the tomato sauce...Thank you ! Kind regards, Hans.
This is what I am serving my boyfriend for dinner tonight...he was very sceptic the first time but then he tried it and now he loves it just as much as I do...thank you for your great recipes and awesome videos!!! :)
I laura im from saudi arabia i've made this for dinner it was amazing thank you ,, and btw in midle east we have the recipy but its called shakshoka we use fresh crushed tomatose and eat it with bred for breakfast you should try it :*
Laura, can you make a "how to cook the perfect brown rice"? I'm new to it and haven't mastered yet. Almost all the time I make it tuens out mushi. I'm used to a more loose rice. Love your videos!!
I've seen this done using leftover mashed potatoes. Divide into potato pancakes and fry, place the potato pancake on the sauce with a fried egg on top of the potato and parmesan cheese sprinkled on top. Was quite tasty but I now need to make it Laura's way.
Hi Laura! Love love LOVE your videos. They are always making me hungry and for some reason I choose to watch them right before I go to bed. I'm an Indian (Singaporean). We have something similar here as well. But instead of tomato based sauce, we use chili. We call it the Egg Sambal. Sambal basically means a chili-based sauce. Its more of a South-East Asian cuisine cause the Indians, the malays, indonesians all have their own variation of this dish. :)
