My all the time favourite breakfast. Whenever i wakeup early i usually make this omelet for my breakfast. Healthy and filling to start your busy day. I hope you like this recipe.

1 medium Onion پیاز
1 medium Potato کچالو
2 medium Tomatoes بادنجان رومی
4 tablespoons Olive Oil روغن زیتون
1/2 teaspoon Tomato paste رب بادنجان رومی

I had a guy from Afghanistan in my class at college (in India), we became very good friends, he used to hang out with us on weekends and we would go eat different kind of cuisine everytime, then he would try to cook us an Afghan dish similar to what we have eaten the previous day, i remember this recipe! we are still friends.

My Mom used to make it exactly the same when I was a little boy in northern Afghanistan. It's called tukhum beryan..... literally means fried eggs. 30 years later I make it exactly same couple times a week. Most delicious egg recipe ever 😋

I remember being in Afghanistan and one day we had share good day on our camp, a couple of local businesses came on the camp and cooked some meals. Per person on the camp, all absolutely loved the food. I loved the food and could not get enough. I have eaten many places in the world and that was some of my best meals. India and Greece was right up there in terms of great foods.

I fixed the eggs with tomatoes and potatoes for my breakfast this morning and I was pleasantly surprised how good it was. I only had sweet cherry tomatoes so I used them. I thought the sweetness would ruin the flavor,, but no, I love the sweetness. Planning on fixing this again. Thanks.

BrettH123 Thank You. I don't know who told him,he has balls that big to make such a comment. I am 1hundred percent american. I was born and raised in Manhattan. Honestly,he must be new to RU-vid,and thought"who will I f..k with today". I have been on RU-vid for 1year,and I have had a lot of hater's come at me,the thing is I do not know any of them. I have enjoyed Afghani food for years. Very much like what we call country style comfort food here in the U.S.. Lots of sauces and gravies with potatoes and onions, cauliflower and all my other favorite veggies. All meats are good with me. The seasonings like cumin and coriander taste great! The best restaurant here is in Newark Ca called Afghan village and serves multi dish spreads that make my tummy growl now thinking of them 😄. I also am Mexican too and the food has a lot of similarities. All in all, just plain great food!

Very popular breakfast specialty in northern Afghanistan provinces. My mom made it with vine 🍅 from our garden. Grew up with it and 💘 it...💖💖. It's called "tukhum beryan"

I'm Hispanic. This is the way we make breakfast. Sometimes without tomatoes but any vegetables will work. Beans on the side. Good protein.

This looks really good. I was able to follow along. Will share this with my mom. I know she will like the recipe, also, based on the ingredients. The thing that may throw us off is the order in which the onions are added. I am used to adding onions once the oil is hot enough before the other ingredients. I understand it takes time to cook the potatoes. Not a big deal. Once complete, all the ingredients will end up in the same destination, my plate :-) 😋

To be honest with anyone reading this, you can always learn about a culture from how they eat & cook their food. If it's rich in ingredients & flavours, the culture & its people are always going to be wonderful as well. As well as, "You are what you eat". Great food = Great people. More of a lunch recipe, here in Spain, where with the addition of a little Serrano ham or chorizo you would call it Huevos Sacromonte. I followed your recipe and it was delicious! The tomato paste adds good richness.
