This week I wanted to try to make the most of this cold winter weather that hit us recently and to find the beauty in the small things. As I notice everyone already rushing around this January, Im trying to take things slow to make the winter a magical time...
There's so many little winter activities I love to do to help my mind and body feel so much more connected to the season and to the natural world around me, even living in London. I hope this video might inspire you to also maybe try out some lovely winter tea and maybe some crafts of your own!

~Gingerbread Cookies (I make them vegan)
-225g buckwheat flour
-100g vegan butter
-80g coconut sugar/brown sugar
-3tbsp agave syrup/maple syrup
-1/2 tsp baking soda
-1tbsp ginger powder
-2 tsp cinnamon powder
1.Gently melt the butter in a pan and mix in the sugar and syrup. Leave to cool on the side
2.Mix the dry ingredients together and then add in the butter mixture and combine well.
3.Form the mixture into a dough, roll out on a baking sheet and leave to cool in the fridge for around 40mins
4.Heat the oven to 190C/Mark 5
5.Cut your dough into desired shapes and bake for 8 - 10mins.
Decorate if you wish, I sprinkled some icing sugar on top.
