Follow Chef Claire's easy recipe for making fresh spaghetti in Emeril's Pasta & Beyond pasta maker using the spaghetti pasta-shaping disc shot at the Emeril Everyday in-house test kitchen. This recipe makes 1 batch of homemade spaghetti, about 1/2 lb. pasta that's perfectly textured and ready to boil!

Emeril's Spaghetti Recipe
(1 Dry Batch Container = 1.25 Measuring Cups)
Makes 1 Batch (½ pound)
Ingredients:
1 Dry Measuring Container filled with all-purpose flour, leveled
½ tsp. salt
1 large egg, beaten
½ tbsp. olive oil
water
Directions:
1. Place the Spaghetti Pasta Disc on the front of the Pasta & Beyond and tighten the Screw Cap slightly over the Pasta Disc.
2. Use a scoop to add the flour to the Dry Measuring Container. Add the flour and salt to the Mixing Chamber. Close the lid.
3. Beat the egg and add the egg and oil to the Liquid Measuring Container. Then, add the water to the Liquid Measuring Container with the egg and oil until you reach the 70-mL line on the container. Stir to mix all the wet ingredients.
4. Press the Power Button and then press the Batch Button once to select one batch. Then, the Pasta & Beyond will begin mixing.
5. Slowly add the liquid to the Mixing Chamber along the entire length of the slot in the lid while the Pasta & Beyond is mixing. You can use a spatula or fork to push any remaining liquid ingredients into the Mixing Chamber.
6. The Pasta & Beyond will pause to let the dough rest and then begin turning in the opposite direction to begin extruding the dough. If the dough is extruding too slowly, you can add about 1 tsp. of water at a time to moisten the mixture in the Mixing Chamber. You can return any extruded dough to the Mixing Chamber to re-mix the dough and improve its consistency.
7. While the pasta is extruding, cut it to size using the Spatula/Cleaning Tool with a downward motion. Cut to your desired length. For most pasta, cut at about 10 inches for each portion.

Twenty years ago, an older relative gave me a pasta maker ( we are of Italian descent). My daughter was a pre- schooler & we used it like a play dough maker...... When the pandemic happened, we dug it out & actually used it to make pasta! When the shelves were bare at the store - we made our own! For pennies a batch, we were fed well!

Made a mess of the first batch, put too much liquid in and got a soggy, clumpy mess. Tried again with less liquid and a flour sifter on hand to give each bunch a light dusting as I cut them, ended up with the best spaghetti I've ever had! Delicious! Quick tip: Have a sinkful of hot soapy water ready, disassemble the parts and give them a soak as soon as the machine stops. Makes cleanup much easier.

How did you get this extruded pasta cooked? I tried boiling it for 3min but the noodles just fell to pieces? Using AP flour and tried getting the dough a little dry and a little wet.

The first time I used it, I used flour because I had no semolina on hand. I bought semolina from the grocery, and it was a terrible experience. I’ve since ordered PASTA semolina from Amazon which is finely ground like wheat flour. Works great!

I have 00 on hand but use it to go half and half with AP for pizza dough. I find that AP works just fine with this machine. 😁😁😁

MY husband used this machine for the first time today and used the basic pasta recipe in the book that came with the machine. It said to use three measures of flour and it turned out like crap. He started over with the recipe used in this video and it came out just fine.

Your husband read the recipe wrong...it says "2" dry measuring containers, and the water, egg and oil is until you reach 150 ml...is exactly double of what Claire is doing here. I have done the basic pasta from the book many times and always comes out perfect! But then again, to watch each video that Claire has done, helps very much in learning how to do it when you just get the machine. The best help ever!

@@consaboramiel no, the recipe says 3 cups. I just got this machine, used the basic recipe in the book, and it said to use 3 cups of flour. I had to add water to get it to knead properly.

@@aslynelf the cup holds 1.5 cups so if it says 3 cups it means 2 of the cups it comes with

@@brittanyw1817 Yep, I like using the special cups that come with the machine, scoop and sweep with the dry measure cup like the lady says and you'll be fine. I got a Rubbermaid tub to store my AP flour in to keep it well sealed, I leave the dry measure cup in the tub since I use it so frequently. You know how boys are when they get a new toy!😂😂😂 First couple of times disassembling/reassembling the parts is a bit fiddly but you get the hang of it. The pin on the pasta cutting tool is helpful in cleaning out the die tool holes.

@@brittanyw1817 Well, they forgot to mention that part in the recipe. The cup has nothing on it that says it is 1.5 actual measured cups - the user would assume it’s a one cup measure. And the recipe says 3 cups of flour, so you would assume that means 3 of the cups. I didn’t think I would have to double check the volume in the cup.

Hi, Claire! I just ordered my pasta maker. Couple of questions ( that may have already been addressed. B U T, I don't have time to watch all of these videos, to find out. I'm a baker- Do the recipes come with weights for the flour? Sifting the flour- yes, no, doesn't matter? Double zero flour- takes a little longer to hydrate- Use- don't use? 😂 Sorry, I'm a kitchen tech- nerd. Oh, one more- adding other ingredients- should that be part of the dry measure, or it can be all by itself? Example- bullion for Cx- dumplins?

I tried with almond flour today and added a bit more water and it didnt work ..does anyone have the perfect ratio..I am keto and do not use all purpose flour ..thank you for your help :) a link to it would be much appreciated

Mine just crumble to nothing while boiling. I made 2 batches, one was a little too crumbly, the other was a little too wet. They both crumbled to strips about two inches long. The pasta doesn't seem to hold up in cooking.

My husband bought this for me since I make pasta by hand. Worse machine ever!! Spaghetti never comes out breaks off in tiny pieces. Tries 4x nothing. Today I broke down and tried the penne. As soon as extruding process began the machine quit working. Used 5x now doesn't work at all.!!! Very disappointing that Emeril would sell this to his fans. VERY EXPENSIVE PC. OF CRAP

Ok, I’m a bit confused. I got my machine yesterday (yay!) and tried using it. I followed the directions in the included recipe booklet, using a low carb flour. Part way through, it looked like it wanted to extrude but stopped pushing it through. It looked to me like it was extremely dry, and not actual “dough”. I assumed it was because of the type of flour. But now I see the problem. In the booklet it calls for 3 cups of flour for a double batch, not the 2 cups that are listed here. Everything else is the same. So I think the book needs to be corrected because 3 cups is WAY too much. It took me almost an hour to get it apart and cleaned. I will try again in a few minutes, using this recipe. Such a waste - that low carb flour was expensive. 😡
