Empty Nester Day In The Life! A Funny Story To Share, Organizing, Cooking And Lots Of Chatting!!

Hi friends! Come spend a day with me! We will do some cooking, a little organizing and a lot of chatting!! Thank you so much for taking some time out of your day to spend with me. I really appreciate it!❤️
Recipe for Asian Chicken Meatballs:
The sauce:
2 Tablespoons peanut oil
2 Tablespoons minced fresh ginger
2 cloves of mince garlic
3 Tablespoons of sriracha (more or less to taste)
1/2 cup low sodium soy sauce
1/2 cup rice wine vinegar
1/2 cup honey
Meatballs:
1 lb. Ground chicken
1/2 cup panko breadcrumbs
1 clove of minced garlic
1 egg
Pepper to taste
2 Tablespoons peanut oil to fry meatballs
Mix all sauce ingredients and set aside. In a large bowl add all meatball ingredients except for peanut oil. Mix and shape into 1” meatballs (if the mixture seems very sticky you can add a little bit more panko crumbs). Heat peanut oil in large frying pan and add about half of the meatballs, so that the pan is not overcrowded and that the meatballs will brown and not just steam. Brown meatballs on all sides, but they do not need to be cooked through at this time. Remove browned meatballs to a plate and then brown remaining meatballs. After second batch of meatballs is browned, at the rest of the meatballs back into the pan and then add the sauce. Simmer the meatballs in the sauce for about 10 minutes until they are cooked through and the sauce is nice and thick. Serve over rice with steamed broccoli. Enjoy!

Hi Tina…Happy Tuesday! I’ve said it before, your vlogs are like sitting with a friend enjoying some coffee/tea which is always so pleasant. And the best parts for me & my friends are chuckles & chats that end up all over the place 😂 Your funny encounter story made me laugh out loud! Hi Tina, the reason you're not sure about the picture placement is that they should be closer together. You can place them as a set on the side of the window or on the wall over your comfy chair. If you hang the set next to the window, you could balance the other side by placing a hanging plant, or a ceramic piece or wicker basket!

Thanks for keeping me company this evening. Hubby working late so I’m on my own, thunderstorms & rain outside, getting some laundry & ironing done, getting lunch & stuff ready for work tomorrow. Was nice to have a friendly voice in the quiet. Love the pictures. Will have to try that meatball recipe, if you doubled the sauce to get more, would it be too much do you think? Hey there! I’m so glad we could “hang out”! I think you could absolutely double the sauce if you wanted. The only thing I wonder about is if it would take too much longer to thicken up and maybe over cook the meatballs??? Not sure?? If you do try that, I would love to hear how it was. Yes, my Lou likes to walk no matter what the weather! Maybe it’s not a bad thing your pup is “prissy” 😂 sometimes I’d really rather stay inside! Have a wonderful rest of the week my friend ❤️

👍 Hi Tina! What a great story...I can totally see you and your friend giggling after finding the black HAT. Such a fun memory for you both. I love your new artwork (they remind me of Scotland). I am a huge collector of art -- especially art that means something to me: either I know the artist or it represents some place I've been or just makes me smile -- and I switch out my art all the time. I would hang those pieces a bit lower. Ideally the center of the picture should be about 60 inches from the floor. Most people hang their pictures too high! You could also hang both pictures on the same side and put something else on the other side...a pretty mirror? A collection of smaller pictures? My seasonal allergies have been bad the past couple of years and I take the Walmart brand of Claritin every single day, all year. And yes one eye waters more than than the other. Pataday has helped but what has really helped is Restastis because my doctor determined that my watery eye (s) is actually dry eye. I'm making that recipe! Yum! I got to see the eclipse yesterday as we were in the totality zone and it was absolutely the coolest thing I've ever seen (I may or may not have cried a little!) I wrote too much! Ack. Hi Sallie! I like your ideas for the pictures. When I keep looking at them, something is not quite right... Question about your dry eyes. How did you figure out they were dry and not just allergies? My eyes don't water constantly throughout the day and I am just trying to figure this all out and I can say it's a pain already! But I guess I should be grateful that I am only starting to deal with this now! Here in Chicagoland, we could see 94% totality. How cool you were in the totality zone! Was it really dark like I saw on the tv?? And you are not the only one to be touched by it. I saw so many people on the news just filled with emotion! Such a cool thing!! Hope your week is going well my sweet friend. I always love "hearing" from you!!❤️

@@tinasbestmidlife as far as my eyes go, my doctor determined that watery eyes can be a symptom of dry eye (weird I know!) I don't feel like I have dry eye at all though! See if the Pataday helps and if not you may want to ask your doctor about the Restasis. And yes...complete darkness for the eclipse! It was so very strange as even at, say 96% totality is was still very light and then BAM it went dark and the stars came out. I was at home watching from my yard but I could hear cheers from all over when it went to total darkness. So cool!

I have an allergy where my nose runs constantly and it's always in stores that are old like a Walmart or a place with used items, like what happened to you. I know how annoying that is. Hi Tina, I developed allergies as an adult too, back around 2000. Moved to the Las Vegas area in 2010, and they got worse from the dry climate. Your watery eye can be from allergies, or you may have a blocked tear duct, which an eye Dr. would be able to diagnose. I have dry eye so I need drops almost daily, and have to use preservative free, and use a nasal spray for my allergies. I take Allegra if I know I’ll be out of the house for an extended time. Stores are the worst, so much dust ! You can try applying a warm compress to your eye several times a day, and massage your tear duct to see if that helps. If the Pataday drops aren’t helping, you could try another brand with a different active ingredient. I loved your VLOG, and that cat/hat story was hilarious ! Those Asian meatballs looked delicious. 😋😋

I’d lower them about 2 inches and I’d place them on top of each other (same side of wall hung together). Place them 2 inches apart and at eye level. Find something equally as awesome for the other side of wall to balance it all out.😊

Oh my gosh you had me cracking up with the hat/cat story, sounds like something I would do. She probably was afraid you would go crazy if she didn’t pick out a piece of furniture, LOL. I liked where you put your new pictures, I have learned that they should be at eye level and I couldn’t tell if that is where yours were. I would leave them there for a few days and see what you think. That recipe looked awesome, I may have to try it. I love your vlogs. Can’t wait to see the fashion haul. Have you ever tried Shein. They are small. Try both together and put the larger beach scene on the other wall. The beach scene picks up the blue in your carpet. I like any scenes. I would also put dark wax on the frames to clean them up.

That woman probably thought, "This delusional lady believes she works in the furniture section of a not-for-profit." 🤣 And that recipe! I need to try it. Oh! And YES! I have seasonal allergies. I didn't always. They've cropped up in the last few years. One eye only is completely normal! Drives me batty. My best defense is, believe it or not, Flonase. One squirt in each nostril morning and night REALLY helps me. My doctor prescribed it just for this.

Hi my sweet friend. I love your videos. I find them to be very interesting and fun! Glad you had the boys home for Easter. The hat story is too funny! No wonder why she wanted to get away, LOL. Great pictures, Tina. I like where you hung them. I don't think that they need to be lowered. And the window is the focal point of the room, in my opinion, so I think the size is fine. Where is cute Louie?? It definitely sounds like you have allergies. That's the one thing I don't have, but my girls do. Mine is the same. I enjoyed your Vlog, Tina! Did you get any good advice about your watery eyes yet? I have been suffering from the exact same thing, and in my case it is always my right eye that pours water. Last weekend, watching my son during my son’s soccer game, my eye was running nonstop. I haven’t tried any drops yet and haven’t really experienced this before so if you have received any good advice, I would love to hear it! Have a great day!

Hi Allison! Thank you! Ugh! So sorry you are experiencing this too! It is annoying! I think the allergy eye drops (Pataday) help a little, but I am only using the lowest strength. But even still there are mornings when I am walking Louie and I look distressed from all the tears! I wish I had something more helpful to share with you! Hi Carrie. I laughed at your comment because it probably did look crazy. One “set” which is not complete was my Mom’s that I want to keep. And I do have one complete set and then realized there were just a couple random ones I had in the drawer that sometimes I leave in my flour, sugar containers. The brush is what I use to scrub potatoes with.
