材料 Ingredients (十六隻蝦餃 16 dumplings)
蝦餃皮材料 Wrapper:
八十克澄麵粉 80g wheat starch
八十克生粉 80g potato starch
一百七十毫升滾水 170ml hot water
一茶匙菜油 1tsp vegetable oil
蝦餃餡材料 Filling:
一百八十克蝦肉,切大粒 180g prawn, diced
三十克冬筍,切絲 30g winter bamboo shoot, sliced
三十克肥豬肉,切丁粒 30g pork fat, diced
調味料 Condiments:
四分三茶匙鹽 3/4tsp salt
四分一茶匙糖 1/4tsp sugar
四分一茶匙胡椒粉 1/4tsp ground pepper
半茶匙紹興酒 1/2tsp Shaoxing wine
一湯匙蛋白 1tbsp egg white
一茶匙菜油 1tsp vegetable oil
半茶匙麻油 1/2tsp sesame oil
一茶匙半生粉 1.5tsp potato starch

You’re fantastic in so many way and I’m a subscriber too. I’m a senior person, a fairly good cook and still do often pick up tips when watching your videos. It helps with my Cantonese too. I noticed in this video when you were making the dough for the wrappers, in the English subtitles, it said potato starch. After resting the dough, in the subtitles, it said cornstarch although potato starch is specified in the ingredients list. Please clarify. Thank you for all the wonderful recipes, keep them coming.

Thank you so much Mama Cheung, I will try it as I am afraid that the pleating is not good. Now I think I am slightly improved, as I often make 潮州粉果. The 1st time that lady cheat us when she taught us to use 1/2 hot water 1/2 cold water, after steamed, nice but the skin harden after when it cooled. Keep up your teaching and more young people will benefit from you.

很有家鄉風味!! I like all your recipes. They remind me of how my mother used to made them except I don't have her recipes. The best part of your recipes is that they are in Cantonese with English subtitles, coupled with step by step video illustration, making it easy for a novice like me to follow.

分量一樣,蒸熟的蝦餃皮全部破裂,皮是粉,沒有一點彈性。

Mickey Yuen 要將兩種粉拌勻,沖入大滾水將粉沖熟,記得用蓋覆蓋著,待三分鐘才加入餘下生粉搓勻,要搓三分鐘,粉糰才有靱性,蒸時便不易破裂,包好的𧎚餃,用濕布蓋著,便不會乾烈,(亦是破烈原因之一),下次再做,要注意這幾点😊

Jan C Hi there, the weight of prawn refers to unshelled prawn.It is OK to do away the lard.

Sorry to say that my dough for this Har Gwo is too breakable! I think maybe the translation of 生粉 not clear. Potato starch in chines is 土豆粉. There are many kind potato starch. They also have a few different kind of 生粉。

没有怀疑80澄粉80生粉加170水的比例有问题吗

用超烫的水慢慢地加,不用跟着食谱170水,加到差不多就可以了(ps:我失败了好几次,才发现😂
