I tried this recipe on Saturday and everyone loves it. Thanks for another great recipe. (I didn't eat it though, lactose intolerance). BTW, I used 8" cake pan and it worked well. The cake seems flat but no one minds. And I substitute half of cream cheese with mascarpone cheese, again no one can tell the difference.

Traditionally, carrot cakes are decorated with "cream cheese" (really Neufchâtel cheese, which is lighter and less fatty than cream cheese with about the same taste and look). You blend sugar, butter and vanilla with the "cream cheese."
