Paestum is a 2 hour drive south from Positano. Dogs are permitted but have to be carried in the museum!
Risotto con Funghi:
Make a vegetable broth (boil an onion, a carrot, some celery in water for about an hour and a half.
If using dried porcini mushrooms place them in a bowl of the broth for at least 15 minutes to rehydrate.
Saute some onion in olive oil, add fresh mushrooms if using. Add the rice and toast it for a minute. I like to add half a glass of red wine at this point but Tommy didn't so it's up to you!
Add the broth, ladle by ladle, stirring the rice to get it creamy. Add the porcini mushrooms with the liquid they were soaking in. Check the rice by tasting it until it is slightly al dente.
Take it off the flame, add the butter and some grated parmesan cheese.
