MY i know can i do the ruby in advance to keep in fridge, when need then put them in coconut milk ? If can, abt how many days? Thank u

2 days should be safe, if keep properly refrigerated

81Aimee1894 Yes, you can but it won’t be as sweet and crunchy. Sometimes you have to make do with things that are not available.

The recipe looks very simple. I tried it today. After boiling the chestnuts, the flour coating came off the nuts. Can you pls tell me why it happened? Any tips? PS: I used canned chestnuts as I couldn’t get fresh nuts here in India. Can I use dry packed chestnuts?

Dharshini Ramakrishnan You can used canned water chestnuts. Did you coat the them twice making sure that they completely coated with flour? The water must be boiling hot before you throw the chestnuts in as the outer layer of flour will be cooked immediately the moment they are dropped into the water. Did you do all these steps? Btw, what is dry packed chestnuts?

The Burning Kitchen Yes I coated them twice, and dropped them in boiling water. Actually, not all of them weren’t coated. Half of the nuts are coated well. Dry packed nuts were something I found on amazon. Not sure how to use them though.

Dharshini Ramakrishnan Those coated should turn out good. Perhaps you should coat them in small batches to ensure they are all coated uniformly. Hope that helps. Please me know should you try again. Happy cooking
