Yeah, you can keep it in the fridge and Change the top liquid weekly till you are ready to use it, yeah you can feed it too… what I usually do when I have new starter: after 3 days (if I am doing the traditional no yeast starter) I would drain the top liquid off, and add about 1/2-1 cup flour and leave it out for couple more days but I would add lots of water so I can drain off the funky bit that gathers on top ..
