Hangi Packs made from Scratch
Basic Stuffing
4 cups of breadcrumbs
1 onion, finely chopped
1 teaspoon sage
1 teaspoon thyme
3 tablespoons melted butter
1 egg
1/4 cup of water
Salt and pepper to taste
Mix all ingredients well and roll them into big size balls.
Hangi packs
Few pieces of meat of your choice chicken, pork, lamb
Potatoes
Pumpkin
Carrots
Sweet potatoes
White cabbage
Fry bread
1 1/2 cup of self Raising flour
1 cup of plain yogurt
Mix well into a dough let it rest and for few minutes then roll out into bread sizes and fry until golden brown and cook well.
Method
1. Season the meat and veggies well with salt and pepper
2. Arrange the veggies and meat into small foil trays enough for one person
3. Add the stuffing balls enough for each trays on top or in the middle of meat and veggies.
4. Cover with enough foil
5. Arrange the hangi packs on the hot rocks and charcoals heated up preciously.
6. Cover the grill well with wet cardboards and wet blankets to keep the heat inside for cooking process
7. Let it cook for 3 hours
8. Prepare a simple fry bread recipe to cook.
Once the hangi is cooked Enjoy it hot with a nice hot fry bread. Yum!!
